Liberal Arts Statistics Course

Q: I am considering development of a statistics course that would fulfill only the liberal arts requirement at our College. This course would not be required for any major nor would it be a prerequisite for any "advanced" statistics courses. If any member is familiar with this type of course and could direct me to a description of their course, a list of topics covered, pros and cons, etc.

But I am working on an expanded version that would be suitable for a 1-semester course. -Our introductory course is taken by students in the humanities (English, History, etc., and Mass Communications), using Jessica Utts textbook. The standard teaching setup is two lectures and one small (15-18) lab/discussion section each week.
