Cookware For Electric Cooktops?

Q: Redoing my kitchen, and might have to go to electric, as I don't want to move a gas line. A very nice person who answered another message on about electric ranges, mentioned that dark colored cookware might work best, like an anodized finish. I just ordered a set of stainless All-Clad, which I'm now wondering about. Can someone tell me if that cookware will work OK on one of those black glass, flat top types of ranges. Do the anodized ones really work better? Much of a difference between the two? Please let me know as soon as possible as I might be able to cancel my order tomorrow. Thanks

A: I guess you are already getting that range, but can I point out that this will show every single thing--down to a grain of salt? I never listened to anyone and really wanted black appliances. Unless you want to clean it all the time or never cook, it looks pretty bad. I wish I had gotten a unit that was not totally black. I also wish I hadn't gotten that type of range at all, but opinions vary quite a bit on that! As far as cookware goes, flat is the word. I got some All-Clad (among other things) to replace my decades-old warped stuff, and the All-Clad works fine. I have the opposite opinion. I love mine. Wipe it down after use, polish it up and I'm done. Have had it over a year and it looks much better than the regular type it replaced. Making sure to use big enough pots that things don't boil over sure helps as well. (tip given me by my sales person) The sales person told me that people either love em or hate em with no in between. She has accepted them back in horrible condition, mostly because things have boiled over and baked on. As a professoinal chef I can tell you quite emphatically that Gas is best. Do not install electric stoves under any circumstances. After many years in the '' Trade'' I now teach professional cookery to Apprentice chefs and I am forever extolling the virtues of gas as a cooking medium. Also, most professional chefs would agreeon this point.Yes.................., I know it's not quite as clean as electricity but look at the fun you can have on a gas stove!. Have you ever tried to flambe Crepes Suzette on an electric stove?. You won't be able to, the flame is not naked!. ( Please forgive my forwardness ladies). So you see, gas is the way to go in every respect when cooking.
