Cookware
3 Ply Vs 5 Ply Vs 7 Ply Cookware?
Q: I finally bought the Kirkland tri-ply stainless steel 12 piece set for $200. These are my first set of really nice cookware. I like the set, but I wish the fry pan was 12" and the 5.5QT saute pan was more like 3 QT. The 5.5 QT seems too large, at least for my stove. So I was talking with a lady at Kitchen Kaboodle, and she said the All-Clad cookware was actually 1 layer of SS, 3 layers of aluminum, and 1 more layer of SS. I figure that they're just using more aluminum than the Kirkland (anybody know how thick the kirkland and all-clad...
Advice On Cookware And A Small Food Processor
Q: The alzheimers myth has been well debunked many times over. It is not a problem, never was. If you want aluminum, go for it. Get the best cookware you can afford. All Clad, Calphalon, etc are nice, but rather pricey. I've seen some of it along with other brands such as Cuisinart in places such as TJ Maxx if they have them in your area. Club Aluminum makes a god saute pan and it is available at WalMart. Their Dutch oven is pretty good also. My preference for pots is stainless steel. We have a set of 35 year old Farberware,...
Air Core Cookware
Q: By now, many of you will have seen the latest infomercial on UHF TV for "Air Core" cookware. Supposedly, this special cookware can reduce meal preparation time to just a few minutes of work, after which the cookware slowly cooks the food on its own. In the commercial, two American fat ladies, Carol and Marilyn, are cooking up all kinds of things in this cookware. For example, the bake a chicken and a chocolate cake in the same pot (with a cake pan separating the two). Somehow, both get cooked to perfection, despite having much different time and temperature requirements. The claim is that this double-walled stainless...
All-clad Cookware
Q: What will you primarily be cooking with it? I love what I hear about ALL-CLAD...and now I am ready to buy. But Now I am more confused...because ALL-CLAD offers 4 kinds; 1- LTD 2- Stainless 3- COP-R-?? 4-Chef-?? what are the differences..beside the color? What the chefs are using? I am interested in a frying pan 12"...what do you people recommned?A: When you have a pan that conducts heat well, you don't need to use as high a heat to get them up to temperature. One of the nice thing about All-Clad pans is that they can stand up to the high heats of professional...
All-clad Copper Cookware Advice Needed
Q: My roommate is getting me a set of All-Clad's Copper Chef (or, as they term it in moronic ad-speak "COP-R-CHEF") cookware, which should be arriving soon. I'm pretty excited about it, as I've always loved the look of copper cookware and this appears to be very well-made stuff. I've never owned copperware, though, and I have no idea what special care it may require. I'm sure it will come with a list of do's and don'ts, and I'm equally sure that list will be incomplete or ridiculous (e.g., "to avoid tarnishing, do not expose to high temperatures" :-) I'd appreciate any advice or...
Aluminum Cookware
Q: Does anyone know of research linking aluminum (the use of aluminum cookware) to Alzheimer's (sp) disease?A: It could well be that some side effect of the disease causes the body to stock pile aluminum and aluminum compounds, instead of the aluminum causing the disease. This is an example of how finding a corelation does not imply cause. There is no research evidence linking the use of aluminum cookware with Alzheimers disease, so far as I know. (You might get a better answer in sci.med.) There has been the discovery of concentrations (relatively speaking) of aluminum and aluminum compounds in the brains of Alzheimers' patients. Whether this comes...
Amc Cookware
Q: I do hope you forgot one decimal point somewhere when it comes to the prices you're mentioning!! I can't believe that 3 pots would cost 2400DEM or $1500 !!!!!! I mean that's $500 per pot! or????? KaariA: well, she did say she got a new job. must be at the central bank. Alan The difference between being diplomatic and undiplomatic is the difference between saying "when I look at you, time stands still", and saying "your face would stop a clock". Anon I said, I did *NOT* buy it ;-) Besides, my new job is really wonderful and we (my SO works...
Ameriware- Us Made Cookware
Q: I noticed Costco is now carrying (online) a line called Ameriware, it's discription and 25 year warranty but also the fact that it's forged in the US certainly got my attention especially after I read in the WSJ that US steel companies which have survived are considered some of the very best in the world for quality....has anyone here used or is familiar with this cookware?A: In order for a warranty to have value, that company or comopany subsidiary must be around for the duration of the warranty. In most cases today, that's questionable. Interestingly, they no longer seem to be available through cookswarehouse.com, for whom they were...
Am Just Checking Back On What Cookware People Recommended For Ceramic Cook Tops. I Think It Was Cook's Essentials From Qvc But Wasn't Sure. Just Bought A Ge And Need New Cookware.
Q: The main thing is to get pots and pans with flat bottoms. It wouldn't hurt to not have aluminum bottoms as the metal will rub off onto the top. You can scrub it off but who needs that? We selected Cuisinart Everyday when we got a smooth top.A: Any cookware will do. The key criteria is that it should have a very flat bottom surface. I have used everything from Scanpans to All Clad to Revere Ware. As long as it's flat on the bottom, your cookware will do just fine. Currently I'm using Wearever Pro that I picked up...
Anodized Aluminum Cookware
Q: I am doing a little pre-shopping homework. Are there any significant differences between Calphalon and the Emeril Lagasse lines of cookware? Are there any other brands of anodized aluminum cookware that stand out above the rest? Thank you for any inputA: myself I have Calphalon and it is nothing fantastic. the finish wears off and they warp if you are not careful. typical aluminum pans. I user a cast iron chicken fryer for browning and such. Calphalon stock pot is ok. non stick pan for lower temp cooking. Knight-Toolworks & Custom Planes +Galoot Made Products- Custom made wooden planes at reasonable prices See http://www.knight-toolworks.com For prices...
Anolon Cookware?
Q: Has anyone heard of Anolon Cookware? They claim to be a "professional" cookware but I've never heard of them.A: Analon can be found at Macy's. I use it and think it's great. I gave away my Circulon and replaced it w/Analon. One of the advantages I find are the glass tops which have a nice fit, they have good, and even, heat transfer, and the cook well with little water or oil. Downside, the metal handles can get quite hot. I use those little slip on covers. They can also be used in the oven. If I'm not mistaken both Circulon and Analon are made...
Another Cookware Post
Q: Coming on the heels of the Townecraft (did I get that right?) thread, I happened to be channel surfing last night and landed on an infomercial. This was hosted by those chicks from "the Mommies", and was selling some kind of oddball cookery system. The premise is that the pans are specially insulated, so you put the food in, run the temp up on the stove, then take them off heat and let them cook from there. Supposedly keeps cooking for hours. As best I could determine, the pots were essentially one nested inside a slightly larger one (they mention that you can take them apart and get...
Another Cookware Question
Q: asking about AllClad, with handle at a funny angle. You have to know how to pick it up. With a pot holder, grasp the handle from the top, close to the pot, and let rest of the handle run up under your forearm. It is very comfortable that way. Large pots have a loop handle. AllClad is the best I have used. I use LeCreuset for casseroles. Good luck,A: Someone recently asked about the best cookware, and everyone wanted to know what said person was cooking. Well, I am also in the market for cookware, and would like your...
Beginner Cookware Set For Smart Chef
Q: Pots and pans and type and quality have come up several times. I wanted to explore the thoughts of the experienced folks here and see if we could come up with a consensus on a well rounded pot/pan collection based on value over the long term. I submit the following... 12 inch cast iron skillet/fry pan... Smooth/machined interior 25 13 quart Le-Creuset Dutch oven for "Oh so many things" 240 4 quart All-clad Stainless Or a real copper sauce pan. 150 1 quart chef's pan or saucier, copper.... reducing etc 100 Ok, about 500 bucks for a set that will grow with you and you could pass...
Best Cookware
Q: For cooking what? The best cookware for frying up bacon (cast iron) may not be the best cookware for pressure cooking (aluminum) or for simmering tomato sauce (stainless or porcelain-clad iron).A: I second this - but if you are talking about *general* cooking, you'll probably want a bunch of things - trying to get it all in one set is silly. For example I have: 2 8 quart stockpots - one enameled aluminum, one stainless. They are used for soup and stock making, large quantities of chili, risotto, etc... Mulled cider, pasta, steaming asparagus and large quantities of other veggies, (they both have pasta/steamer...
Best Cookware And Cutlery?
Q: Which is the best? Not sure on cookware yet. As for cutlery anything high-carbon stainless steel is good especially german-made like J.R. Henckels or Wustof. I have a Kasumi Chef Knife and it's hand-crafted, 32 layers of hcss. It's BEAUTIFUL and probably the best chef knife I could ever ask for. As for the price it goes from $130-170 for 8 to 10" I believe. Mine was 169.99+tax/shipping. It seriously cuts the hairso ff your arms if you want to know good and sharp. My husband didn't believe me that it was a great knife and voila~ That was his...
Best Cookware For Cast Iron Burners?
Q: We've got an electric range with the "European" cast iron burners. We've had it for 2 years and love the evenness of the heat. Trouble is, aluminum pans eventually warp and won't pick up the heat. I can usually stomp them back into some shape (now that's a cooking image, doncha think?) Steel pans warp eventually, too, and can't be stomped back into flatness. I'm now resurrecting some cast iron pans that I'm sure won't warp. My question: if you have cast iron burners on your range, what cookware have you found best?A: What are you using? Sounds like the pans are made for the...
Best Cookware For Healthy Cooking?
Q: I like to know if anyone has used those "healthy " cookware which does not need grease or water?? I saw the calim from Vita-Mix products. I like to know what is the best cookware that is convenient and healthy? Stainless steel is still the best? Will these hard alluminum cookware with nonstick surface safe for health?A: i am a fan of non-stick. easy cleanup, little oil, etc. there are others who will hotly disagree. and aluminum has never ever been conclusively proven to be dangerous to your health, unless of course you are hit over the head with one....
Best Cookware? Help Please..
Q: I'm tired of buying non-stick cookware only to have to replace it a year or two later because it is worn out out! I've decided to buy all new cookware and have narrowed my selections down to three possible choices: 1) "CUISINART" stainless steel with flat copper/stainless steel bottoms; 2) "FABERWARE" stainless steel with "Millennium" non-stick coating; or 3) "CALPHALON" non-stick cookware. Anyone have any opinions/expierence with these three choices. Or even a recommendation of something different. Any help would be greatly appreciated. I don't know...
Best Non-stick Cookware?
Q: Looking for recommendations on non-stick cookware, especially large frying pans. Had a T-FAL, and hated it. My "normal" cookware is Calphalon, which I love (but doesn't do eggs well), and some old, heavy, enameled Belgian cookware called "Descoware" which I inherited, and love. Is the Calphalon non-stick any good? Any other recommendations? Cost is not important.A: i know it's stupid but i find that a cheap MIRRO aluminum 7" pan with a good non-stick coating is the ideal crepe/egg pan. i can't imagine how anyone uses the heavy stuff for such delicate items. i buy a new one every year or so, i gave up trying...
Best Value In Non-stick Cookware?
Q: I am wanting to start purchasing some nonstick cookware. I would like to purchase all my cookware from the same manufacturer. At this point I'm thinking that Calphalon is my best bet. I have interests in Asian cooking as well as other areas, and I understand that the Calphalon woks are amongst the best. I am looking for a cookware set which is a best value..I don't mind spending money but don't want to pay $200 for a skillet.A: I think your best bet is the Cuisinart Anodized Non Stick. That particular anodized finish doesn't stain easily like the Calphalon. You have even heat as the...
Calaphon? -- Berndes Cookware/kaiser Bakeware
Q: I was at Bloomingdales the other day and was looking to buy a the Calaphon Commercial non-stick, until I met a sales rep from Berndes cookware. Bloomies had a special on a Berndes 8" skillet for $9.99 (regular price $50) so I bought it and have been using it for several weeks now. Supposedly it has a lifetime warranty (compared with Calaphon's ten year). I was curious if anyone has had any good/bad experiences with the Berndes line. The brochure says that they are Europe's oldest cookware manufacturere and they are made in West Germany. I like the skillet but I don't know what it will...
Calphalon Commercial Anodized Cookware
Q: I have the opportunity to purchase a 12 piece set of Calphalon commercial anodized cookware for around $240. I've heard both good and bad things about this line of cookware which I can summarize as follows: Good: ---- 1) Durable 2) Uniform heating Bad: --- 1) Can't go in dishwasher 2) Not non-stick 3) Heavy I've also heard reports of the adodized coating wearing off. Don't know how accurate these reports are. All of the negatives are not particularly important to me. I don't think I'd put any set of expensive cookware in the dishwasher even if the manufacturer OK'ed it. I've ruined cookware before this way. I've also used non-stick cookware and...
Calphalon Commercial Cookware
Q: I take exceptionally good care of my calphalon commercial cookware and I'm quite frustrated by all the stains that seem to accumulate on the exterior bottoms and sides. I've an electric stove that I try and keep clean as well that I use them on. Can anyone tell me where the heck these stains come from and what I can do to clean them off? Thanks!A: I call it Calphalon nastiness, which terms are pretty much synonymous to me. I long since chunked my Calphalon and bought All Clad. I don't think there's a d_____ thing you can do without running...
Calphalon Cookware
Q: Just wanted to have your opinion on calphalon cookwareI have (gray anodized) Calphalon pots, and hate them. They were treated with tender loving care, but the gray surface still wore off. Buy All-Clad!A: Expensive cookware, such as All-Clad, provides significantly better performance than cheap cookware. Among other things, the former has no hot spots or cold spots, making for better cooking and simmering. I have the non-stick Calphalon and love it. I did have a gray anodized pan, but found that it stuck, (especially after i burnt oil in it. heh.) The non-stick pans are terriffic though. They heat great, and...
Calphalon Cookware; Is It Worth It?
Q: I'm looking to purchase a set of pots and pans. I really like the way Calphalon cookware is built, but I'd like your opinion before I commit any money. For those of you who own items from this line I'd like to hear about the good and bad concerning its everyday use. After a year or two does the black finish wear off leaving bare aluminum? Do the handles stand up to regular (every day) use? Do I really need to be concerned about the pots and pans being made of aluminum? The brochure states "the finish does not react with...
Calphalon Cookware Question?
Q: Hi, I thought this would be the best place to ask if anyone uses Calphalon hard-anodized cookware and how you like cooking with it. Does food stick or is it truly non-stick? I'm thinking of investing in the Dutch oven and have never used this brand of cookware. Thanks for any advice you can offer! ValerieA: It's good cookware. If you want true non-stick then Calphalon has a line of non-stick as well and it is also excellent. Anodized aluminum is not non-stick. I don't see that as a problem personally but you shouldn't confuse the two. If you...
Calphalon Non-stick Cookware
Q: Has anyone out there had any experience with Calphalon Cookware? We have a "non-stick" Calphalon frying pan - our second. The first deteriorated (not because of misuse) and no longer was "non-stick". Because it had a lifetime guarantee, we took it back and were given an identical frying pan. Now, it too is beginning to deteriorate. I'm sure we're not doing anything wrong - we treat it like gold. Are there any other stories out there? These pans are pricey.A: I have sold Calphalon(R) Cookware for 7 years and am convinced it is the best made. We are constantly...
Calphalon [or Other Aluminum] Cookware
Q: I am in the market for some new cookware and I was leaning towards purchasing an 8 or 9 piece set of Calphalon's Aluminum Cookware... An old roommate of mine bought me an omlette pan of theirs for Christmas of last year and I really love it so I thought I'd buy some more of their product...I have two(2) questions however: (1) Has anyone had any experience with Calphalon's cookware, be it good or bad...??? (2) My brother (whose a doctor) passed on some information to ...
Calphalon's New "pots & Pans" Basic Cookware - Anyone Tried It?
Q: I've just finished reading a whole bunch of your posts on cookware on Deja.com. Thanks for all the great info! I tend to agree with the consensus of most of the group that the quality stuff (All-Clad, etc.) is a good long-term investment. But I'm a bachelor who does only the most basic cooking by myself, with the occaisional simple meal cooked with my gf. Plus, I'm on a budget. Today I saw Calphalon's "Pots & Pans" line of non-stick cookware. It's not heavy-duty like the expensive stuff, but I find the light weight convenient. It has little raised dots all over the...
Can I Use Vision Cookware On Flattop Stove
Q: is it ok to use vision cookware on the newer flattop/ceramic top stoves? Put the pot on the range with food or liquid in it before turning on the element.A: Because Visions is arguably the worst commercially produced cookware ever, that's why. The double boiler is fine and the pans are okay in the microwave if you like cooking in the nuke. But on the range the low heat conductivity combined with medium heat retention ensures terrible sticking problems. Cast iron gets over the sticking problem caused by low conductivity with the nearly stick-free carbon coating of seasoning, but Visions glas-like-stuff has even lower heat...
Care For Cookware
Q: My husband and I settled on Calphalon non-stick cookware. He wants to put it in the dishwasher and I think it should be washed by hand. The information that came with the cookware does not say it is dishwasher safe. In fact, it mentions nothing about the dishwasher! It recommends cleaning it by hand with warm soap and water. Is there any reason why it CANNOT be put in the dishwasher?A: I don't know, but we received several pieces of regular Calphalon cookware (not the non-stick) and the literature with it specifically says *not* to put it in the dishwasher....
Cast-iron Cookware
Q: Question: Is there a correct way to care for cast-iron cookware? I love to cook and my favorite cooking utensil is my 10 inch cast-iron frying pan. My mom has cast iron also and she taught me care for it by cleaning it with a soap pad (such as SOS or Brillo), thoroughly drying it by putting it back on a burner for a few minutes and then conditioning it by rubbing in vegetable oil or non-stick spray with a paper towel. Of course if the pan was used for a grilled cheese sandwich or something we could just wipe it out instead of...
Cast Iron Cookware
Q: Just bought a bunch of cast iron skillets. On sale, of course - el-cheapo. After opening the box, I find that the cooking surface is very rough - like sand paper. Looks like they never machined the cooking surface after the pulling the pan from the mold. Now I know all about seasoning cast iron pans. But I'm not sure if seasoning will overcome what appears to be a manufacturing defect. Will seasoning do the trick -- or did I get what I paid for when I bought el-cheapo?A: My wife bought me the same thing a couple of years ago, her intentions were good. I...
Ceramic Stove Cookware?
Q: Am just checking back on what cookware people recommended for ceramic cook tops. I think it was Cook's Essentials from QVC but wasn't sure. Just bought a Ge and need new cookware.A: The main thing is to get pots and pans with flat bottoms. It wouldn't hurt to not have aluminum bottoms as the metal will rub off onto the top. You can scrub it off but who needs that? We selected Cuisinart Everyday when we got a smooth top. Any cookware will do. The key criteria is that it should have a very flat bottom surface. I have used everything...
Chantal Cookware
Q: There's been some good discussion about Calphalon, but does anyone know anything about Chantal cookware? It's pretty stuff, but how well does it work? Is it worth the money or am I better off with another brand (such as Calphalon)? Thanks!A: Chantal is wonderful cookware! I have two pieces a crepe pan and a tea kettle. Cookware is very personal and people will fight to the death over which one brand is the best BUT IMHO no one brand is correct, certain pieces of each brand work better than others (i.e. copper for sauces, Chantal for crepes, stainless steel for stock pots, etc) Chantal cleans...
Circulon Cookware--i Got All-clad
Q: I'm sure you will be pleased with your All-Clad as we have been with ours.... When we got our first couple of pieces from Cookware & More, they suggested using Barkeepers Friend... it works very well, it really removes stains, etc. I haven't had the need to actually polish my cookware yet, but bringing the stainless back to a very high gloss should not be much of a problem, the steel seems nicely machined and will take polish nicely. The new cookware is quite a joy to use compared to the Farberware that we'd been using for 20 years. Of course, now that I've been bitten by...
Circulon Cookware
Q: I heard they start to accumulate grit in the grooves, but it can be taken out somehow..I think with a brush.A: I like my Circulon skillet, but I only use it for some things. It's great for something like cooking eggs or any other nonstick cooking job. But, it's not very good if you want to make a sauce, especially if you want scrape up the little bits and pieces of meat or juice or whatever to incorporate into the gravy or sauce. Those little bits tend to settle into the grooves and are lost. (I've never had any trouble cleaning my Circulon,...
Cleaming Aluminum Cookware
Q: try white vinegar for the crusty mess and unsweetend grape kool-aid for stains. Both clean very well and are safe for the environment. :-)A: How is the grape Kool-Aid used? Is it made up as a hot solution, and what is the active ingredient involved? Is this also effective on stubborn black stains on stainless steel cookware as well? Some of these stains are so burned-in on old pans, that even oven cleaner doesn't seem to cut them. I have used Easy-Off on aluminum, and it gets the item clean, but turns the aluminum black or very dark grey....
Cleaning Anodized Aluminum Cookware?
Q: What's the best way to clean anodized aluminum cookware? You know, that gray-looking stuff, like Caphalon. I've got All-Clad cookware in the LTD series, which is stainless steel on the inside (which I've already learned to clean effectively), but the anodized aluminum outsides are starting to look a little too well-used.A: Tin is a good conductor and has a low specific heat capacity. A tin lining will make the most responsive pan, by far, and will be ideal on an even heat source. But do you see my theory that a more insulating layer might not be such a bad thing? The high specific heat of...
Cleaning Brown Spots On Anodized Cookware & Graying Cookware
Q: I've got two questions on cleaning anodized cookware (calphalon to be exact). First is unfortunately I've got a electric cooktop...one of those halogen ones...(since my wife doesn't like gas stoves - afraid of starting them - don't ask)...and after using a skillet for the first time I got a nice brown splotch on the bottom....I tried commet, bon ami and nothing seems to get the stain out. What can I use...does durmond by calphalon really work? The second question, is one of the pots seems to be a lot grayer and duller after cleaning than the others...is it normal for them to fade, or maybe is it a...
Coatings On Cookware
Q: I'm going to lash out and spend up big on some top quality cookware, but although I am a fairly experienced domestic chef, I am floundering with what to get. Stainless Steel, aluminium, non-stick.....? If non-stick is so good, why don't proper chefs use it? Is it just because THEy don't have to clean it, the kitchen lackey does?Any suggeetions or pointers to sites that may help me decide would be much appreciatedA: Interesting, that bit about lackeys doing the cleaning. If you're an "experienced domestic chef" you _must_have some ideas about what you like. Even 'though they're cheaper bought by the...
Comfortable Cookware
Q: As a Christmas present to myself, I bought some more Piazza cookware from one of their US distributors. Included were cookpots, saucepans, and frying pans. My first experience with Piazza was with their "brazier" (at least that's what Williams-Sonoma called it. Piazza actually calls it a "two-handle frying pan"). I love the two handles, but I figured I'd pick up a conventional frying pan with one handle also. Last night, I decided to break in my new "one handle" frying pan by making a quick stir fry. Nothing fancy...just some cubed chicken breast, garlic, ginger, sliced red bell peppers, and sliced onions that I...
Commercial Cookware Catalogs
Q: I am a catalog junkie, especially motorcycle things and cookware. I would like to get some commercial cookware catalogs (I intend to place orders, in addition to just looking through them and drooling over the $2000 stoves). If you have any information re commercial cookware distributors, I would be grateful if you could take a sec and email me the phone number/address so I may obtain a catalog. If there is interest, I will summarize and post the results.A: I just spent a few month looking for a stove. Commercial stoves for $2000 can not be installed in a home. Comparable proffessional stoves...
Consumer Reports On Cookware
Q: This comes up all the time. Certainly, All Clad is very good cookware. Pretty, performs well, but at a very high price. As noted by CR and many people here, other cookware can perform just as well. When it comes to boiling potatoes in a pot, cheap stuff can perform just as well also. Comes down to the looks versus money thing.A: I have two saucepans by the same company, the rest is a mix of aluminum, cast iron, non-sticks, steel and some matching cheap-o glass and silicon bakeware. I've only had to replace the cheap-o non-stick pans a few times in about...
Cookwar
Q: I have recently been thinking about upgrading my cookware. From what I've seen and read, I think I'm like to purchase pots and pans with a stainless steel cooking surface. I have found some great deals at restaurant supply stores, but unfortunately all of the higher-quality pans I've found are of all-aluminum construction. I would like to find something similar to All-Clad at a lower price; pans that have a stainless liner with either a copper or aluminum layer for heat distribution. Does anyone have any input on what commercial-grade cookware is out there that...
Cookware -- Help!
Q: I'm planning to buy a cooking set but have a few reservations. Can someone please explain the advantages and disadvantages of the following cookware? 1) Anodize cookware -- e.g. Magnalite cookware 2) Copper cookware Also, I was wondering if anyone knows the advantages and disadvanges of the following: 1) Pyrex mixing bowls 2) Stainless steel mixing bowlsA: Many years ago, we were given a pyrex mixing bowl set. They were good bowls but they are very heavy which translates into a sore arm when you need to mix something that is already heavy. Recently I went to a resturant supply store and purchased stainless steel...
Cookware - Can't Make Up My Mind
Q: My newly remodeled kitchen needs all new cookware and I can't make up my mind: All-Clad Stainless, 10 pc set for around $600. Calphalon One Hard Anodized, 10 pc set for around $550. Emerilware (made by All-Clad), 10 pc set for around $200. You can see all of these at http://www.chefsresource.com/cookware.html There are advantages to each. For instance, the All-Clad stainless set comes with steel lids, not glass, which I prefer (because glass breaks too easily) and appears to be the professional choice. The Calphalon anodized seems to be better for non-stick cooking. And the Emerilware has a much better price than the All-Clad although it's essentially the same stuff...
Cookware - What's Best?
Q: I've decided to re-tool my kitchen and would like to replace my old MagnaLite cookware. I just can't decide on a brand. Can you help? I'm considering the following: Farberware Millenium and Circulon Commercial. I'd like a non-stick, if possible. My Magnalite looks like junk even though it's only 10 years old. I'm looking for durable, even-heating cookware that can stand up to a dishwasher.A: I replaced all of our cookware a few years ago. Before I did, I read 2 articles on buying cookware, one in (I believe) Food & Wine and one in the Washingtonian magazine. Both said...
Cookware-what To Get?
Q: I'm thinking about getting new cookware for Christmas. The set we currently have has most of the black non-stick surface scraped off. My wife has the habit of using metal in them, (mashes potatoes in the pot, etc). Does any of the newer cookware have non-stick that doesn't come off, sort of imbeded into the metal? How good is the Calphalon, All Clad & others (other than expensive!) What brand do you prefer & why? Finally, which pot or skillet size can't you do without, & use most of the time.A: I agree with Patrick, I really enjoy my T-fal pans....
Cookware
Q: I purchased a T-Fal cookware set two years ago, and the non stick coating seems to be wearing off every one of the pieces, along the trenches on the bottom. Needless to say I am extremely disgusted with the whole T-Fal thing. I am in the habit of taking good care of my cookware, and am rather disgusted with myself for wasting my money like that. The time has come for me to make an investment in cookware, and I have no idea how or what to buy. I can't afford to spend much more than $250...
Cookware Advice Needed
Q: Am considering a stockpot purchase and have been looking at the All-Clad Master Chef series. I have also been looking at Sitram and a couple of other brands that all boast the same 18/10 gauge steel with a thick aluminum core in the base. Is there any difference between all these different pots except the price? All-Clad stuff is at least double the cost of these others. Does it matter or am I paying for their advertising campaign?A: AllClad is expensive partly because it is constructed for even heat distribution which avoids hot-spots and burning. For most uses that a stockpot will...
Cookware Again
Q: I found an interesting and comprehensive article about cookware. If you want to take the time to read the details it is educational, but even skimming you will learn something http://forums.egullet.org/index.php?showtopic=25717A: Very interesting, even if it's 5 years old. After a really long, detailed, scientific article, at the bottom, he gets really practical for the 99% of the general population (not US, of course!) who cook in the kitchen: "So, now it is up to you to ask yourself some questions. You want a saut? pan. Fine. Do you really care whether the heat goes all the way up the sides? Probably not. OK, then. It probably...
Cookware: All-clad Vs. Kitchenaid ?
Q: Today my wife and I walked into a cookware store here in Seattle. We found a new line by KitchenAid; the Five ply 18/10 stainless steel clad cookware to be exact. The clerk suggested that, in her opinion, All-Clad is among the best on the market for stainless steel cookware. However she seemed to like the KitchenAid as well. Granted she admits that KitchenAid is new to the pots and pans market but they have the potential to give All-Clad a run for its money. Another gentleman from the net informed us that the KitchenAid is made by Meyer. So, the question is does anyone have any technical,...
Cookware At Costco
Q: Has anyone bought the "Kirkland" cookware at CostCo? My SO is talking about buying me cookware for Xmas. He asked what I want. I was in CostCo the other day and they had several sets. One set that caught my eye was the "Kirkland" set, particularly because it has glass lids (which I like). It's a 10 piece set for ~$150 (3 lids, 4 pans and 3 pots or 3 pans and 4 pots) that seems reasonably nice. I like the configuration of the pieces, a nice medium/large sized stock pot (I have a huge, restaurant grade stock pot for when I really...
Cookware: Cheap And Safe?
Q: I've only been reading this newsgroup for about a week, so please don't flame me into submission if this topic is old hat.... I'm looking for suggestions for "safe" cookware that is reasonably priced (keep in mind that I'm a college student). I'm tired of non-stick pans that lose their coating (I know this can't be healthy), but I'm really not too keen on having everything I cook stick to the pan. Have I just gotten bad non-stick pans (likely), and if so does anyone have suggestions for pans that don't loose their coatings? Or...
Cookware Confusion
Q: I've been looking at cookware for our new glass top stove, and boy, I'm I confused. Not only does the cookware have to be flat, but also smooth as to not scratch the glass. That along with our health concerns with prolonged use of Aluminum digestion. I have read about Scanpan and also about ceramic cast iron products. The main issue for us is skillets and fry pans. Saucepans are a different issue. Can anyone please tell me their experiences with these products or offer other suggestions? I'm very disappointed that canning and pressure-cooking isn't recommended for the glass top stoves since they are considered too heavy. This...
Cookware Customer Kvetch
Q: Funny thing is, I bought my Le Crueset dutch oven precisely because I wanted to make Osso Buco and needed a pot that went into the oven. But I wouldn't expect someone to say this is the pot you want if I asked for a lightweight pot, that's for sure. I think the woman should go to a restaurant supply store.A: After having spent the last 30 years in various forms of retail and customer service, I have to say Dim itri is the type of person who gives customers a bad name. I currently manage a store that primarily caters to our senior population, and it...
Cookware For Electric Cooktops?
Q: Redoing my kitchen, and might have to go to electric, as I don't want to move a gas line. A very nice person who answered another message on about electric ranges, mentioned that dark colored cookware might work best, like an anodized finish. I just ordered a set of stainless All-Clad, which I'm now wondering about. Can someone tell me if that cookware will work OK on one of those black glass, flat top types of ranges. Do the anodized ones really work better? Much of a difference between the two? Please let me know as soon as possible as I might be able to cancel...
Cookware Handles
Q: Is there a reason that the handles of current high-end cookware rise at such an angle to the pot, instead of being perpendicular to the pot side? I can understand the angle with a saute pan, as the angled handle helps in the flipping maneuver, but I find the angled handles on the pots to be cumbersome, making the pots harder to "handle." I'm considering taking my All Clad sauce pans and sauciers to a local metal shop and having the handles bent so they will be horizontal. I'm wondering if there is some good reason for the angle, or if it's just...
Cookware Info?
Q: Our experience is different from Brian's. If it is seasoned properly (different from just wiping with oil -- see many past posts on subject), it does not rust in storage and it does not get anything else oily and it is no harder to clean than any other pan. And it is the least expensive cookware that performs well. Maybe I should add that our experience with cast iron is limited to skillets / frypans. We agree that coated cast iron such as Le Creuset is very good indeed (particularly the dutch/french ovens for braises, stews and casseroles), but of course it is much more expensive.A: I'm...
Cookware In London & Paris
Q: I will be in London & Paris next week, but only for a couple of days in each. Any recommendations for good places to shop for cookware (bakeware, mostly) or food items (confit de canard...)?A: Cookware in Paris : - La Carpe, rue Tronchet - trendy, traditional and unexpected items - Simon, rue Montmartre - traditional, extensive, used by professionals - La Bovida, on the corner of rue Montmartre and rue Etienne Marcel - like Simon - Genevi?ve Lethu, several locations (use yellow pages to find them) - trandy, more geared toward pretty than useful When in Paris you MUST get to E.Dehillerin. 18 -20 rue...
Cookware In "sets"
Q: So often, I see cookware (pots, skillets, etc) being sold in "sets". A "set" might be one pot of two sizes, one saucepan and a skillet, for example. I would NEVER buy such a "set". My needs might be for three pots of one size, two skillets of a size, teo saucepans of another size. I find it difficult to find items that are individually available - is the general trend towards "sets"?A: All of the top cookware lines are sold as open stock with sets also available. A set often gives someone a running start at a better price than buying individually....
Cookware & More Gone?
Q: I have a great set of All Clad cookware from Cookware & More. I've been using it for maybe 5 years now and I couldn't be happier with it. I was also really glad to get it for about 50% off from Cookware & More. I was telling a friend about it, went looking for the website, and find that it's not there anymore. The site I'm looking at is www.cookwarenmore.com - which is the link from www.outletsonline.com. I get an error message. Are they gone? I really hope not...I was starting to think about buying some bakeware, which I would never consider paying...
Cookware On That Infomercial????????
Q: I hate to bother you, but I hope one of you can help me. My aunt is trying to find out the name of a new cookware, that is currently being sold on an infomercial. You supposedly put food in, heat the pot to a certain temperature, then turn off the heat, and the cookware continues to cook the food (even if placed in the freezer!) All I know is that the infomercial is hosted by the two women that call themselves, "The Mommies" Any help would be appreciated. Thank you,A: I didn't buy cookware from an infomercial, but I have...
Cookware [physics 101]
Q: I have the feeling I missed some secret information about high-end cookware, and I certainly wouldn't inquire of a manufacturer like Calphalon, for example, but what advantages does it or any other cookware actually have over a "wardrobe" of enameled ironware and tin lined copper? Please address heat absorption and heat retention or other principles of physics, since aesthetics doesn't affect cooking any more than washability does, though I might consider weight when I am 103.A: It's about heat conduction, actually. The nice thing about aluminum is that the heat gets around (that's why you don't necessarily burn yourself on a foil-wrapped baked potato just off the grill);...
Cookware Question
Q: What is the best cookware for the home chef? Should one consider non-stick or is the regular surface better? Thanks,A: .........whatever you choose, try to avoid the non-stick, in favor of stainless steel, preferably with either copper (Cuisinart) or aluminum (AllCladd) sandwiched in between the two layers of stainless. Depends upon your peresonal preferences. The majority of posters in this NG prefer stainless steel clad aluminum cookware. I prefer hard anodized aluminum. Many people like the convenience of non-stick. So do I, but I prefer the taste of food cooked in other cookware. As far as stainless steel clad aluminum, the All-Clad...
Cookware Ratings
Q: Just thought everyone might be interested to know that Consumer Reports rates most home and professional type cookware in its December 1995 issue. I was surprised to see that some of the "cheaper" brands of cookware actually performed as well (or better) than the "professional" types of cookware including All Clad and Calphalon. At any rate, if you're considering the purchase of cookware, I would suggest reading the article.A: What they didn't report on was the longevity of the various brands and models. Warping of the bottom of the pan is the worse thing that can happen (causes uneven heating). Non-metal (plastic, etc.) handles...
Cookware Recommendatio
Q: I'm looking to purchase a new set of cookware. I currently have a set of T-Fal non-stick cookware where the coating is coming off. I'm not interested in spending alot of money. Something from Wal-Mart for example would be fine. I'm looking for something that is non-stick, can be put in the oven and can use metal utensils (I have 2 kids that don't always remember to use the plastic utensils). I was looking at a Wearever Anodized set at Wal-Mart today that had high ratings on epinions. Does anyone have any other recommendations.A: I don't know from Martha's pots,...
Cookware Recommendation..?
Q: My wife is wanting to replace our eclectic mix of cookware with something new. We'd given T-Fal some thought but then saw numerous postings about problems with the lids and with separations. We'd certainly welcome some recommendations..........!A: If you are serious about cooking, follow my mother's suggestion: buy the best and you'll never be disappointed. I love my Cuisinart utensils, but I am told that All Clad is as good or better. I also have a few pieces of le Crueset which I would sorely miss. However, neither of these lines is...
Cookware Recommendations?
Q: Hello, I'm looking for recommendations for cookware (ie pots and pans). Just on paper, I like the concept of Farberware Millenium, but I'm open to other suggestions, and would be interested in comparisons of brands, materials, etc. Thanks,A: Farberware makes a good product. We have been using our original set for 30 years now and the SS pots still look good. Only loss in all of that time is a lid knob. If you like the looks of the Millenium and have the $$ for them go ahead. You won't be disappointed. You do not have to spend that much to get good...
Cookware Recommendations
Q: Hi all ... I am new to this newsgroup and hoping some experienced cooks and/or chefs will have a minute to respond. I love to cook and am slowly getting "into it", though by no means consider myself a good cook, I am still reading the recipes. But, I will get there. I need recommendations for stainless cookware. I have heard all the rumors about using some cookware and getting Alzheimer's disease from the lining flaking off some skillets, etc., etc. I basically am looking for recommendations for both pots and skillets. As...
Cookware Shops In France
Q: I'm planning for the Next Trip. Does anyone know of good cookware stores in Paris? I have been to Dehllerin (sp) and will go back there. Suggestions appreciated.A: There is a very good cookware shop (professional-oriented) called Simon, at the corner of the rue Etienne-Marcel and rue Montmartre (2nd arrondissement). Other than that, the BHV (department store), at the subway station Hotel de Ville, has a good cookware departement. There is also Genevi?ve Lethu (several stores in Paris), very fashionable. Kitchen Bazaar (can't remember the location), interesting. And La Carpe, rue Tronchet (near the Madeleine), which has objects I have never seen anywhere else (but expensive)....
Cookware: Smooth Inside Vs Rivets
Q: My wife wants a new set of quality cookware and I recommended All-Clad to her based on what I've read in this newsgroup. However, she is concerned about handles that are attached with rivets. She recalls that her mother had pots and pans with rivets and that the rivets were very difficult to keep clean. For this reason, she wants her cookware to be smooth inside. 1) Does All-Clad have a tendency to build up food or oil (especially tomato sauce) around the rivets? 2) How do folks keep the rivets clean? 3) Assuming that she insists on cookware that is smooth inside, I suppose this...
Cookware (stainless Or Non-stick)
Q: I just got some solid expensive Emeril cookware which is stainless steel. I've only just found it it's not non-stick and I'm very annoyed. I naively assumed everything these days is non-stick. Can anyone tell me why non-stick stuff is even available? Is there some advantage to having non-stick? As far as I can see, there isn't. This stuff I got was not cheap and I love it in every other way - but now I have to go out and buy a non-stick frying pan.A: I'm going to assume for a moment that you are upset about the pans...
Cookware Suggestions
Q: This is my first time in *this* newsgroup so forgive me if this is an old topic... I'm looking at purchasing some decent cookware and I'm having a tough time deciding what to get. The brands that I've been looking at are Calphalon and All Clad; hard anodized aluminum vs. stainless steel; regular vs. non-stick. The non-stick varieties make sense since you do not need to use as much fat when cooking. But no non-stick surface is going to last a lifetime and it is hard when you do want stuff to stick to the pan for deglazing. The hard anodized aluminum can be placed in...
Copper Cookware- Reasonably Priced
Q: You have found my favorite store in the world! The website does not do justice to this treasure chest. The exterior of the store looks exactly like the photo on the website - it seems that it hasn't changed since the day it opened in 1820. The interior is equally Old World. Wooden shelves, floor to ceiling, groaning with gleaming copper cookware. Knives and every sort of cooking utensil imaginable in bins and baskets. If they don't have it, you don't need it. No prices on anything, just stock number stickers! To find out, ask one of the sales...
Copper Cookware
Q: Are your pots stainless or tinned lined? If its the latter, how often do you have them retinned?A: Copper is indeed denser than aluminium, but its specific heat is less. Silver would be better than copper, but not economical. Aluminium seems to give a good performance to value ratio, but copper is better in absolute terms. What the hell are these "absolute terms"... the levels of drunkeness at which your wife is willing to tolerate your bullshit, as in "Dammit Steve, how many times do I have to tell you to lay off the Absolute... you're absolutely positively shit-faced steenkin drunk, AGAIN!" Ahahaha. . . his...
Copper Cookware Lining
Q: I'm considering the purchase of few pieces of copper cookware. Much of what I've seen has a tin lining on the inside. I've heard that this must be "re-tinned" from time-to-time. Yesterday, however, I happened across a set with the brand name of Swissmar that has a stainless steel lining. Wouldn't it be much more advantageous to have a stainless lining versus tin. And just where does the tin go to in tin-lined cookware such that it has to be replaced periodically - does it go into the food?? Would appreciate perspectives.A: I don't have a good source for re-tinning. ...
Cordon Bleu Cookware
Q: Last night I experienced (there is no other word for it) a sales pitch from a door-to-door salesman selling Cordon Bleu cookware. He said the company was originally from America and had been in business for 57 years and had a good reputation. Has anyone heard of them? The cookware he was selling was their TempTone Nutri-system. It consisted of 19 pieces of heavy surgical steel pots and pans, with copper clad bottoms. The big feature of the stuff was that when the food had heated up to a certain temperture a whistle set into the lid would blow (like the whistle on...
Corning Vision Cookware Question
Q: y mom has some Corning Vision glass cookware. She used to have a flat-top (I think she said ceramic, if that makes sense) stove burners and used the cookware on the stove. She got her kitchen redone and now has coil-type burners on the stove. What she and I are wondering is if it is safe to use the cookware on the coil-type burners on the stove. The pots don't say whether they're stovetop safe or not, and I tried googling to find Corning's cookware site, but they've apparently sold off their cookware division. Anyone know for sure? Thanks in advance.A: Visions is...
Corning Ware
Q: I just signed in and I'm curious to find out if anyone here owns any Corning Ware, Spice of Life cookware. I own two pieces, one is a 1 quart square baking dish with lid and a 3 quart baking dish with lid. I have always used it for baking dinner although under the handle of both pieces it says: stovetop, oven, microwave. I would not be afraid to use it on the top of a gas stove, however the stove I'm using right now is electric and I'm scared to put it on the heating element. A long time ago, I split...
Costco Cookware
Q: Just wondering what folks here on rfc think about Costco's stainless clad cookware. 12 pieces for $199. It looks pretty and sounds good. Has anyone bought and used them?A: I'm looking for new cookware too. I like the fact that you can buy separate pieces at Ross, TJ Maxx, and Marshalls, because some sizes I use more than others. Cuisinart has nice looking heavy pans and they are less expensive at the outlets but still pricey. Does the costco set seem heavy? Are the lids glass? The costco tri-ply stuff is pretty nice, but the price has risen high enough to...
Country Cookware -- Cast Iron Skillet
Q: Next to barns and old tractors, the most distinctive artifact of the old-style American family farm is the cast iron skillet. There was a time before the aluminization of cooking utensils that these skillets could be found in almost every rural kitchen. These days, they're not so common. You can find cast iron utensils at hardware stores, kitchen supply shops and some grocers, of course, but no new skillet measures up to a well used one. Like fine wines, these culinary implements get better with age. A well seasoned skillet with decades of experience producing hundreds of batches of corn bread and fried chicken is practically priceless....
Cuisinart Cookware...please Help Me Decide
Q: Trying to decide among the everyday stainless, the non stick stainless, or the anodized non stick aluminum ones. Would like to stay with Cuisinart. I'm a bit wary of non stick, as I feel they only last a short # of years. Anyone have these, and can give me some pros or cons of the different materials. I have some Le Creuset now, I'm a bit tired off. Thanks!A: I just went through a major overhaul of the pots and pans around here a short while ago. Here's how I approached it: I hate Teflon. Period. You can't get it too hot,...
Dark Brown Glazing Inside Chinese Pottery Cookware
Q: Does anyone know what is the dark brown glazing on the inside of (traditional?) Chinese pottery cookware? I would like to know if it contains lead and if it is safe to cook acidic food in it. (For those who are not familiar with the cookware I'm talking about, it's a light brown or beige earthenware with a rough, porous texture. It is also used for serving certain dishes in Chinese restaurants.) Please reply by posting.A: Lead is used as a flux in low temperature glazes. Lead glazes are soft, brilliant, slightly yellow in colour. this yellow tine affects other colours which ma be added to lead...
?desperately Seeking Unusual Cookware
Q: I'm trying to find out about some interesting cookware I saw on an infomercial on TV. The cookware had the following features: 1. The tops of the pots were squared off so that was easier to pour from the side of the pot. 2. The lids had a vent so that instead of boiling over, liquid would bubble up into a depression on the lid. 3. You could use the vent for pouring out liquid from the pot. Has anyone seen these?A: I'm trying to find out about some interesting cookware I saw on an infomercial on TV. The cookware had the following features: 1. The tops of the pots...
High Quality Cookware
Q: So, my better-half and I are having this debate of sorts - he is convinced that when one has high quality cookware, particularly stainless steel cookware, that the dishwasher is *much* better for it than hand-washing. He asserts that the cookware will last much longer, and suffer less wear-and-tear. In fact, he said that hand-washing will cause it to be scratched, and not last as long. This seems completely counter-intuitive to me (although it does seem a good argument for a dishwasher!) Plus, many times a dishwasher cannot deal with the things which are baked...
Do I Need A Dutch Oven?
Q: I've acquired a few things over the last couple of years thinking I *needed* them, but it turns out I don't use them as much as I thought, or even at all. My set of cast iron skillets is at the top of the heap, in this discussion. My glass oven pans (that i'm now afraid to use) are probably next. Seems like "Dutch Oven" comes up a bit in cookbooks and such. Is it a mandatory kitchen tool, or can i achieve the same result with other devices? (Such as a slow-cooker).A: i love using my cast iron cookware, but...
Dream Cookware, Cutlery, Appliances
Q: Hello cooking experts, Being a newsgroup fan of stuff I love (golf, acoustic guitars) I realize the best place to get opinions, contrary to advertisers' wants, is at the newsgroups and not epinions.com or even the deja.com rankings. So, here's the info: I'm getting married in August. Having been in college the past 5 years but graduated, I may now actually have the time to be the weekend gourmet I aspire to become. And since I'm also getting married, I get to register for lots of goodies. I love to cook but know very little about the best products. So here's my question-- what...
Ecko Home Cookware. Info Needed!
Q: I have a full set of ECKO home cookware, and recently broke the handle on one of the 6 qt pot. Please, if anyone has a current address for the company, please pass it to me. I am unable to find my paperwork. This Cookware was sold at home demo parties in the mid 1970's as waterless cookware. It was made of heavy guage stainless steel. They also sold cutlery. Thanks in advance.A: Wait, I think I bought a set of those pots! Do they have handle/knobs that you could switch back and forth from steam to no steam? I'm sorry, I don't have an address for...
Emeril's Cookware
Q: Last night, I saw Emeril introduce his "Emeril's Cookware" line. We're sure to like them because he designed them. The man certainly has some novel ideas in his designof the cookware. He made them round! I saw one round pot that had a handle on one side, and another handle 180 degrees around the pot. Are you following me? And this pot had a lid, a round lid that had a handle right in the middle of it! Oh yeah, babe. And then there was what looked like a skillet. It too was round, but only had one long handle on one side. I didn't see any other...
Enamel Cookware?
Q: As some of you know I only moved to Australia around 5 months ago to be with my irc sweetie (we are planning a wedding now) and as a result I wasn't able to bring over allthe cookware from my apartment in canada (my brother has since inherited it all for his new apartment). My fiances mother has given us varous pots and pans, i bought a large pot/pressure cooker which i am able to use for soups and large pots of sauces etc, but money is REALLY tight for us right now, he is a student and I left behind a massive student loan...
Expensive Cookware?
Q: What do you all think of that West Bend Kitchen Craft or Lustre Craft cookware that is stainless steel and supposedly vapor-lock for waterless cooking that sells at fairs and through home parties? It costs over $1,000 for the basic set. Is it a scam?A: It has been my experience that ALL home party/county fair merchandise is grossly overpriced. In addition, when you get it home, a LOT of it isn't the same quality you saw demonstrated. I estimate that of the $1000 price for the cookware, half ($500)goes to the demonstrator, another 25%/$250 goes to the multi-level marketing pyramid people for commissions, and...
Expensive Cookware? (calphalon Etc)
Q: Does anyone have any comments on the "expensive" cookware I keep seeing in stores? You know, the $50-$100 a piece stuff? I recently got a $60 calphalon frying pan as an xmas gift, and am wondering if it's really worth holding on to (and the idea is that I'd buy a few more pieces to match it) or if there is another brand (or something altogether cheaper) that would be a better buy? I don't cook THAT much, and I don't need THAT many pots and pans, so I may as well go ahead and buy the best I can, since I'll probably never need...
Expert Chefs - Cookware Design Advice Sought
Q: Hi Expert Chefs - I'm working on the design of a whole new range of cookware for a major cookware manufacturer, for sale in the US and Europe. I'd like to gather your opinions, as end-users, about the design criteria. So, if you'd like to add your input to the project, could you please answer some or all of the following? For your interest, when the project 'goes public', I will e-mail all respondents, with video stills (pcx files) and motion video (Quick-time mov files) of the results. Wouldn't that be nice? The questions: 1. The client has asked the range to...
Farberware Millenium Cookware
Q: I bought my wife a set of Farberware Millenium Cookware for Christmas. I would like to get some idea if it was a good idea. So what are your experiences with it? My wife thinks Revereware may be better. Thanks for all the help and sharing.A: I'm a fan of Revere Ware, but that's just because my mom has used it for 50 years and I've used it for (goodness!) 20. In all respects, I think Farberware appears to be about the same as the Revere. They have similar handles (which I find quite comfortable) and similar weight. I can't see any reason why...
Farberware Millennium Clad Stainless Steel Cookware
Q: I'm deciding between different brands of stainless steel/full-core aluminum clad cookware (in other words, All-Clad and its clones) to purchase. I'm pretty sure I want to get either Cuisinart Multiclad or Farberware Millennium Clad Stainless Steel cookware. I hear great stuff about the former, but the Farberware line is new and I haven't heard anything one way or the other about it. (I think its so new that I only know of one source for it - www.potsandpans.com .) The Farberware Millennium Clad Stainless line is not the same as their FM Stainless Copper Clad line or the FM 18/10 Stainless line (which is only clad at the...

Granit Cookware?
Q: Anyone come across some info/specs or else has experience using a cookware line called GRANIT ....maybe manufactured in France? There was a husband/wife team at the Lonsdale Quay here in North Vancouver showing and selling this cookware. Looked interesting but definitely PRICY...but this is not what got my interest...rather it was their description of the manufacturing process. Now get this: Supposedly this cookware is made up of ACTUAL granite powder that has been bonded {?} together and 'formed' like cast iron....even requiring 'seasoning' before usage. The material wall thickness is something like 7mm (1/4"+) with a similar thickness of Aluminum base bonded to it. ...
Handles For Calaphon Cookware
Q: I was given a set a Calaphon aluminum cookware. It is fine, except for the tendancy of the handles to get too hot. I believe I have seen somewhere insulated handles that slip over the cookware handles. Does anyone know where I can find (and preferably mail-order) such handles?A: For the handles on my cast iron pans, I bought a slip-on "pot" holder at Lechter's for a few bucks. I've seen ones for Calphalon that appear to be some type of rubber, but when I tried to get one on and off in the store, I decided I'n never be able...
Health Craft Cookware
Q: This is just too conincidental! I was at the Wisconsin State Fair this past Saturday (in Milwaukee) and they had HealthCraft Cookware demonstrations. My husband and I sat through one (it lasted about 45 minutes) and we were impressed. The cookware is touted as being waterless and I think, greaseless. The waterless part means that you can cook vegetables without boiling them in water (like frozen veggies) and without all the water that steaming requires. What you do is cut up your veggies and just run them under water. Shake the excess water from the veggies and just put them in the pan. The lid has a steam...
Healthy Cookware
Q: Our family is trying to decide on healthy (i.e.; non-toxic) cookware. I hope you don't mind me posting in this group -- I figured there may be many readers of this group who have already tried various types of cookware. We have basically narrowed it down to titanium or enameled cast iron with the latest news that nickel may flake off in stainless steel. At this point I am only familiar with Scanpan and LeCreuset. I was wondering if anyone out there had tried both of them and had an opinion on which is better. If there are any other brands we are...
Help: Best Affordable Stainless Steel Cookware
Q: I would appreciate any suggestions of attractive and effective stainless steel cookware. I've been looking at the following products, but if anyone knows of any others they'd like to recommend, it would be aprecciated:A: Most of mine is Revere Ware copper-clad, which I've had for years. Farberware is similar in quality. For either one, you shouldn't even have to pay even as much as you cited. If you have a large department store nearby they typically have 1/2 price sales in Revere and Farberware several times a year, sets or open stock. It is worth the wait, if you can. BTW, if you...
Help With Cookware Purchase
Q: My wife and I have recently become much more interested in improving our cooking skills (not really sure why). As a result, we were wondering if we needed to invest in some high-quality cookware. We currently have RevereWare, but would like to move towards something like All Clad. Are we nuts?? We certainly don't have $500 lying around, but we would be willing to make the sacrifice if we knew it were worth it. What should we do? (a) Buy the All Clad (b) Buy another set of cookware (preferably cheaper) (c) Learn with what we've got I did a search on dejanews...
High Quality Cookware
Q: I am really excited about a new cookware I have learnt about, and I want to share it with everyone. It is one of the premier cookwares in the market today. How Much To Ask For Waterless Cookware?
Q: Please forgive the cross-post, but I don't know exactly which newsgroup would be more appropriate for my question, as I've seen waterless cookware discussed in both places. My problem is this: My mother recently attended a picnic where waterless cookware was being demonstrated by a company called Townecraft. Thinking that this would make a good present for her aging mother, she bought what apparently was the "starter set" for what she tells me was about $2800. This includes ~5 pieces in total, about two pots and 3 pans, all with lids IIRC. Unfortunately my grandmother was unable to lift the pans, which are somewhat hefty, especially for...
How To Use A Dishwasher
Q: But hard anodized aluminum, most (realy all, despite what some manufacturers claim) non-sticks, all cast iron (even coated) and many coated surface pans, as well as any stainless for which the appearance is important, should not be put in the dishwasher. Not only can the ionized water (result of how hater is heated in most dishwashers) effect and/or negate the finishing processes of manufacturing cookware, but the caustic detergent that can etch glass and crystal can also do major chemical damage to many of these pots and pans.A: I bet you use your clothes dryer instead of hanging your laundry to dry... I bet you sometimes...
I'm Sometimes Horrified To Find How Long That Half-bottl
Q: I have a tendency to buy "for a rainy day," so I sometimes end up with pkgs of things that should have been used long before. I've now taken to writing on the label the date I purchased (e.g., Bisquick, other dry mixes) or the day I opened (e.g., mayo, salad dressings) so I have some idea what I'm dealing with. I'm sometimes HORRIFIED to find how long that half-bottle of salad dressing has been sitting in the back of the fridge!!A: My question involves the use of non-stick treatments on cookware. I'm registered for a set of cookware that includes a couple...
In Search Of Cookware
Q: I have been looking for a set of cookware I saw on TV a few years ago that had some kind of special handle that that released from the pots and pans and could be used on the whole cookware set. Has anyone ever seen anything like these? If you have what is the name? Are they any good? Thanks,A: They are called "Ingenio" by T-Fal. They've stopped making them. But you might be able to find a set on Ebay or at Overstock.com Might even find them at a place like "National Wholesale Liquidators", or Odd-Job, or even TJ Maxx or Marshalls. I don't...
Internet Cookware Vendor Site, What's The Best?
Q: Does anyone know of an internet site where multiple vendors are compared for the best prices and the least expensive shipping for cookware. These exist for books, and for computer items. I have not seen one for cookware. Thanks in advanceA: My site www.e-talian.com will soon be carying the finest in culinary cookware available on the net. Our new addition should be in place within a week or so . . . .please check us out then!! check out http://www.theposhpeddler.com for cutlery and baking stones...
Iron Cookware
Q: I have some old Lodge cookware, and it is indeed well-made. As far as I'm concerned, this is the stuff on which to cook - holds heat, cooks well and easy to maintain. I also have a lot of iron cookware from a company names ERIE, from my wife's grandmother that must be over a hundred years old - still quite useable and we use it. Now if I wish to add to my cookware...is Lodge still well-made? The last thing I bought by Lodge was a cast-iron camp hibachi that was a good purchase, and I use it all the time, but...
Iron Cookware Ok On Glass Cooktops?
Q: Looking at new cooktops a salesperson told me iron cookware couldn't be used. What's the deal?... I'm not giving up my iron, I love my LeCreuset stuff and unenameled pans. Why can't you use iron, does anybody use iron on glass cooktops, or do I have to stick with coil elements?A: What exactly are "glass cooktops"????? If they are those all-smooth, no-element electric cooktops, I have one which I will give you for the price of shipping!!!!!!!! OR, do NOT do it!!!!!!!!! Now, if I have it wrong, please fill me in -- becuz the one that I have & am about to replace came...
Is Any Nonstick Cookware Real?
Q: I've used my RevereWare for 25+yrs and use some cast-iron skillets which are probably 50+yrs old. I tried non-stick (Teflon and Silverstone) a few years ago and found them very bad - usually placed on a base of inconsistent thickness and unpredictable heating/cooling qualities, plus required use of special tools. I'd like to get an omelette pan (and if this works, ultimately much more) of nonstick material. Two simple requirements: 1) I can use ordinary tools instead of the flimsy plastic and nylon which Teflon, Silvastone, TFal and Calphalon require. 2) Does not become unusable in heavy use after a few years (like Teflon or Sivastone). Any advice will be greatly...
Is Cuisinart Or Farberware Cookware Any Good?
Q: I have been looking at a lot of diffrent cookware. Two of the nicer sets (that are available to me in local stores) are Cuisinart Everyday, and Farberware Millennium nonstick. The Cuisinart cookware is MUCH more expensive than the Farberware (almost $300 for a 14 piece set). But what I'm really interested in is which is the better cookware. Ie how do the two compare as far as hot spots, sticking (not real important), performance, wear and tear over the long term, etc. Dose anyone have any experience with these brands and if so good or bad? I have been thinking...
Is There A Difference Between Brands Of High End Cookware?
Q: I was browsing the Kitchens Etc. store today looking for egg cups, but I took a quick stroll around the pots and pans. My cookware of choice is All Clad (stainless steel, have 4 pieces to date, think they're fabu), but I notice a lot of manufs. have a stainless steel line. Tonight, I saw the Viking line of ss pans, very impressive looking, shiny and heavy. (I knew Viking made ranges and other kitchen appliances but never knew they made cookware, too.) I know Cuisinart has a line of heavy ss, too. Do you really think there's a major difference between top of...
Is There A Faq For Calphalon Cookware?
Q: Is there a FAQ for Calphalon cookware? There are a few pieces at a few department stores around town that are priced at "introductory pieces" prices, which are ~50% off retail. I am impressed with the thickness of Calphalon pans and skillets but object vehemently to their pricing to dealers. NO dealer will discount and each has told me that they would lose their Calphalon franchise if they were caught discounting. This reminds me of the same practice that Cuisinart had back in the mid-70s and they were busted in a class action suit by someone in New York City. There are...
Is There Any Decent Dishwasher Safe Cookware?
Q: I do most of the cooking at our house, and after I cook, my wife usually offers to clean the kitchen. I want new cookware for Christmas, but my wife absolutely insists on something that can go in the dishwahser. Is there any decent cookware that can go in the dishwasher? I know your not supposed to put Calphalon, etc. in the dishwasher. What happens if you do? Does the diswasher ruin it somehow? Shorten its life? Really doesn't hurt that much?A: Le Creuset is certainly dishwasher-safe. Good choices in this line would be dutch ovens, the buffet casserole, and saucepans. ...
Just Starting Out...need Cookware Ideas
Q: I am about to make the big step and get married in October which brings me to the important part of Registering my gifts. Im wondering if anyone can help me out by helping me pick some cookware that my fiance and I would be pleased with. This is some of what I am looking for: - Food that doesn't stick to the bottom - Easy to clean and take care of - For gas or electric style stoves (I don't know if this makes a ...
K-mart All-clad 'like" Cookware
Q: I bought a set of the tri-ply cookware from K-Mart and was at first happy with the way it cooked. Within a week I noticed that the rivets were all corroding badly and had become seriously pitted. Apparently the rivets are made of soft, reactive aluminum rather than stainless steel as would be expected. I returned all for refund and then bought All-Clad instead. BTW I tried a Dutch oven (3-qt) from the Martha Stewart line of Enameled cast iron and found that the rims rusted badly. My LeCreuset treated the same way holds up just fine. There must be a major difference in the...
Keeping Copper Bottom Cookware Clean?
Q: I just purchased some new Artisan copper bottomed cookware and I am wondering about the best way to clean the cookware to remove the tarnished and oxidized copper bottoms and get them back to their normal shiny copper look. Thanks in advance.A: I used "Twinkle" copper cleaner/polish on our Revereware (I swear, I've no relation to the company--they just happened to pick my name). Running them through the dishwasher tended to keep the bottoms shinier longer (I don't know if this is good for more expensive pans, though). Leaving a pan in the sink overnight would darken it rather quickly (especially if the sink was damp). ...
Kitchencraft Cookware And Waterless Cooking
Q: For God's sake, make sure it's an architect that can cook! The previous kitchen here was a professional kitchen designer/architect job. Very good quality units, bugger all use fer cooking in! Well, you could boil an egg, or make a cuppa tea... When I redesigned it, I was rather stuck for space - the 'room' is 17 ft long and about 5'11" wide, but has no walls! well, a bit of an exaggeration, but: Far end wall complete: 5'11" wide, floor to ceiling. I have to have the hob here on the wall between us and the house next door (we are...
Knives Vs. Cookware Vs. Kitchenaid
Q: Ok, I wanted to solicite some opinions. I am thinking of making a serious addition to my kitchen. Sorta thinking of my own christmas present for this year. The choices are: 1) Knives. I want a set of Henkles four star knives. I would probably buy a nine peice set or possibly just the same dollar amount of peices I really want. The sets I have been looking at run in the 350 dollar range. 2) KitchenAid. What can i say. I think I "NEED" a kitchenAId. The thing is that I do not bake so...
Lecreuset Cookware - Anybody Have Any Experience?
Q: I have a glass top stove and very old pans that are warped and do not sit flush. I am thinking about purchasing LeCreuset cookware even though it seems kinda expensive. Anyone have any experience with this cookware? Do foods stick to it, etc. etc.A: Le Creuset is heirloom quality stuff. I have 3 different sized cocottes, saucepan with double-function lid, ribbed griddle, etc. Love them! The only only things you will need to watch is to avoid damaging the enamelled liner (Glissemail) and note the weight. LC skillets are hard to handle if you have arthritis in your wrists, or some other special...
Lifetime Cookware Decision
Q: Ok, so I'm about to commit a substantial amount of my net worth to cookware. What should I buy? Given that I'm making this 'great investment' I want it to be for lifetime. I've narrowed my search to these products: - Calphalon non-stick - Cuisinart stainless I've been trying a Cuisinart pan for the last two weeks and I like it very much, although I hate it when things that shouldn't stick do stick. Before this new stainless pan I've always used cheap non-stick products and like the convenience of easy cleaning and little oil need. The idea...
Lodge Cast Iron Cookware
Q: I can't believe you can't find a local dealer. If Target, WalMart, and your local hardware and kitchen stores don't carry Lodge cookware, try Lodge themselves: http://www.lodgemfg.com/ If you're touisting outside the far west, Cracker Barrel restaurants sell house-branded Lodge cookware.A: See, you're just leaving the door wide open there.... however, I will refrain from walking through. Ilene (LI, NY) What if the Hokey Pokey really is what it's all about? Ahhh...go fuck yourself...Has it ever been brought to YOUR attention that yer a friggin' imbecile? BTW It is spelled you're or your, not yer... I've got a 12" Lodge skillet that I'll happily trade for a 12" 'Favorite Piqua...
Looking For A Certain Brand Of Waterless Cookware?
Q: Several years ago some salesman came to our home and did some waterless cooking demo. I can't remember the name of the company but I do remember that he had some kind of electric skillet that had some type of oil sandwitched inside the layers of steel. It made it cook in some special way that I thought was pretty neat. Anyone know what cookware set I may be thinking of?A: It seems to me that the same effect can be obtained simply by using a flame arrester on a conventional range with conventional cookware for much less money. No, I'm serious. Why...
Looking For New Cookware
Q: I'm fairly new to this newsgroup, been lurking mostly. But now I need some advice from you experts. :o) I'm looking to buy new cookware. I have looked thru some catalogs and done a little window shopping, but getting another persons opinion helps me more than anything. I would like to try regular surface, not non-stick. A set most likely of two (or three) saucepans and a fry pan. Or would it be better to buy exactly what I want seperately? While cost isn't a huge issue, I'd rather not spend more than say...$300. I'm probably leaning toward, is it...Belgique? Anyone have this? How is it holding up...
Magnalite Cookware
Q: Is this cookware still avaiable ? I was give a couple of peices form a friends collection after she passed away. I have looked around but no luck, It is very nice stuff and would like to buy moreA: I picked up a couple of Wagner cast iron skillets last summer for a buck or two each. Heck...someone had to take them off these kind people's hands. My brother took my mom's old cast iron. (It's all he knew how to cook with). I have to admit, the best tag sales I have been to, with the best "finds", are the ones...
Magnalite Uncoated Cookware
Q: My wife is looking to buy a new set of cookware. She saw a 10 piece set of uncoated stainless steel Magnalite at the Chicago Cutlery outlet store, on sale, for $196. It looks nice and appears well made. She agreed to let me solicit the group's opinion before she made the purchase. If only I had done so before I purchased my KitchenAid mixer a month ago. :-) Anyone familiar with this cookware and is it a good buy at $196? The gal at the store said, and the Magnalite brochure says, this cookware should not be put in the dishwasher. She...
Main Ingredients Cookware?
Q: Anyone have personal experience with any of the Main Ingredients line of stainless steel cookware from Dillards? We've narrowed our search for new cookware down, but would like to ask before we commit $400 to a 16-piece set. Thank you.A: Are you sure you wouldn't first rather look into the materials that the cookware is made from? Copper is good for certain kinds of cooking (e.g.,sauces), cast iron is good for retaining heat in long-time simmering and/or deep frying. Heavy aluminum has its own uses, as do the combinations - such as stainless steel w/copper-clad bottoms (not No.1 for anything). Brand names...
Materials Of Cookware
Q: Last night, I gave a speech in my toastmasters group I gave a presentation based on the following: http://www.cookingforengineers.com/article/120/Common-Materials-of-Co..., where several types of cookware are compared. Though no specific recommendations are made (the author talks a little about his favorite combinations), it seems that the best "pure material" for cookware is cast iron, in terms of thermal properties, reactivity, and price. The worst "pure material" is stainless steel, at least in terms of thermal properties, and it is best suited for other uses such as flatware or mixing bowls. According to the article, the best combination is stainless steel with a heavy aluminum or copper disk ("All Clad", I...
Microwave Cookware Recommendatons?
Q: I was looking for LittonWare which apparently is no longer available. I can't stand using "microwaveable" plastic containers where the cover warps after the first use, and the container starts to melt when heating foods with high oil content. My needs ar mostly for reheating leftovers and canned food. I've noticed quite a few vendors on the web that sell inexpensive "LaCuisine" sets. There's also "Amberware" at http://www.amberware.com/ which looks interesting. Does anyone have experience with these? Any other recommendations?A: For my money, the best microwave cookware is made by Corning. Either use "CorningWare" (the white glass/ceramic stuff), or Pyrex glass. They are relatively inexpensive, (you can get various assortments, different...
Name Brand Discount Cookware?
Q: Where can I get some good discounts, either on or off the internet, on sets of high quality namebrand cookware like Calphalon, Cuisinart, All-Clad? Are there any websites that discuss the quality of different brands?A: There is an All-Clad discount store in Flemington, New Jersey, which also has a web site. It's called cookware and more (sorry, don't have the URL, but I found it fairly easily with Yahoo). The discounts aren't that great, but for example I bought an All Clad Master Chef 3.5 qt. saucepan for $68. List price through Chef's Catalog was $105. There's also a Le Crueset outlet in...
Need Cookware Advice
Q: Everybody has their preference, mine is castiron. A well seasoned castiron pot is every bit as non-stick as anything on the market. It is cheap, indestructable ( I am still using some of my grandmothers ), and very heavy (that's the bad news). The trick is in the seasoning. Do a InterNet search on castiron and you will find articles on the ins and outs of seasoning a castiron pot or ask here; I'm sure there are some experts.A: I've had a nice experience with Tools of the Trade pots, relatively inexpensive ($50-$60 for 8 piece set) and workes well, and it has the...
Need Cookware Recommendation...
Q: We just built a home and I went with a gas cooktop. Never have cooked with gas before. It's OK but I have a problem. The cooktop is a KitchenAid that has grids that fit together so its a level look all across. Anyway, some of my cookware (especially the frying pan) will not sit evenly on the burner. I have a 30 year collection of cookware, not a complete set of anything. Is there a particular type of cookware that is meant for the type of cooktop I've described? Thank you so much for any help you can give me.A: Are...
Need Deep Glass Cookware
Q: I am looking for a glass casserole-type dish big enough to submerge an item 6 in. by 7 in. by 3.5 in. tall. Corning had a line of cookware called visions, but no one seems to sell it anymore. The corningware "french white" series does not appear to be made of glass, but I cannot determine just what it is made of. As you have probably guessed, this isn't exactly for cooking. But cookware is so much cheaper and easier to get than specialty labware. To send me mail, please remove "other" from "otherworld" in the address. Thank you for your patience.A: Corningware...
Need Suggestions For Cookware Performance Tests
Q: I have too many pieces of similar cookware, and would like to get rid of some to free up some room. I want to keep the stuff that performs better for its intended purpose. I would welcome suggestions on 'scientific' methods of testing my cookware to accurately and conclusively determine which piece outperforms the other. I am primarily looking to establish eveness of heating/browning (ie. "hot spots"), as well as release qualities for the non-stick skillets, plus whatever performance characteristics are desirable for woks and saucepans/stock pots. This is what I hope to test:A: Good quality nonstick lasts for many years and is preferable for many cooking tasks...
Need Wolfgang Puck Cookware's Phone Number
Q: I'm trying to put together a Wolfgang Puck cookware set as a present for my girlfriend. (She's a great cook but for years has been stuck with poor hand-me-down pots and pans.) [ TIME-OUT: I know I can't control the Usenet, but still I would like to make an earnest request. I *really* don't want this post to give rise to a holy war over what's the best cookwear out there. I have a few WP items that I bought at a yard sale and both I and my girlfriend find them great, so for...
New Era Surgical Stainless Steel Cookware
Q: Has anyone used New Era surgical stainless steel cookware? If so, how do you like at? Is it easier to clean? Does it cook food faster? Does it distrubute the heat better? Any words of wisdom would be appreciated.A: It looks like cookware made by P.B. Helms Co. in Dallas TX. This appears to be the company that makes a lot of generic cookware for other companies. I love their FAQ, which states: "If the stainless steel is called 'surgical stainless steel,' you can be certain that it is a good grade of stainless steel. The numbers...
New Here, & Curious (nonstick Cookware)
Q: New here, but not to Usenet. I lurked for a long time here and in the barbecue group before life got too busy. So I've been back here, reading for a bit and I have a question about nonstick cookware, specifically frypans/skillets. Right now, we have three different nonstick pans in the house. The one that I thought would be the best, a Calphalon 'Professional' nonstick, has been disappointing. Maybe I shouldn't expect more than three years out of a pan that gets used maybe three times a week, but it's got most of the Teflon coating flaking off, and it's pretty much...
Nigella's Cookware?
Q: i don't recognize the cookware Nigella uses on Nigella Bites. at first i thought it was Bourgeat Tradition Plus, but now i don't think so. anyone recognize it? in particular, i'm curious about the saucepans she uses.A: Don't know if this is the one, but could it be Fissler Profi 18/10 stainless steel cookware? - the site claims so... http://www.thearcadewales.co.uk/fissler.htm I watch Nigella Bites regularly and love most of the modern serving and cooking pieces that she uses. I would love to track down the lipped medium sized glass pitcher that she uses in the temple food episode to store yogurt. I also...
Non-stick Cookware
Q: We are about ready to purchase a new set of non-stick cookware. Our current set (Steelon) proved to be a real problem to clean and I don't want to duplicate that problem. I know that I want heavy cookware that cooks evenly, does not stick, is easy to clean, and lasts more than two years. Price is not a problem. Any recommendations?A: Your search is over......Scan Pan....Scan Pan.....Scan Pan! Pricey but worth every penny...best cooking pans I have ever seen! Buy your last set of pans! I recommend Calphalon' s nonstick cookware very highly. I love it, and use it all the...
Non-stick Cookware Questions
Q: I'm looking for small frying/sautee pan with a non-stick finish, but I'm tired of throwing away the ones whose coating has fallen apart after a year of household use. We usually use plastic utensils with non-stick pans, but let's face it...plastic has no business being used in hot environments, and sometime, you need just the right size tool, and you only have it in metal. Can anyone recommend a cookware brand they've had good luck with, whose finish has lasted a few years?A: Cooks Essentials from QVC. Excellent pans, metal safe, oven safe to 350dF, warranted for life. I can verify that.... I have Calphalon...
Non-teflon Cookware Question
Q: Hi All! After having been bird-less for quite some time now, I am soon receiving a truley spectacular pair of Solomon Island Eclectus (parrots). I am desperate for help choosing new cookware, as I now have a huge collection of pots and pans of different brands...all teflon coated. I am not sure if stainless would be best, copper maybe, I need help!! Husband says to keep it under $500...Any advice Greatly appreciated!A: After having been bird-less for quite some time now, I am soon receiving a truley spectacular pair of Solomon Island Eclectus (parrots). I am desperate for help choosing new cookware,...
Oatmeal Raisin Cookies Smoke While Cooking On A Heavy-duty Sheet
Q: I use two cookie sheets for baking the recipe. One is a Pyrex professional metal sheet. (If you google on "Pyrex Professional Large Flat Cookie Sheet", you'll see it in the second photo for amazon.com.) The other is a no-name non-stick sheet. Normal cooking time is 11 minutes at 375F. I use both sheets at once. Shortly before time is up, smoke comes from the oven. The raisins on the Pyrex sheet seem to be the cause. Oddly, the cookie bottoms are NOT burned (or even darker), and the cookies taste just as good as those on the other sheet. I tried reducing the temperature to 350 and...
Old Movie, Old Cookware..
Q: I was watching 'Good Neighbor Sam' (Jack Lemmon, circa 1959). It's a funny movie, but I hadn't seen it years and this didn't register with me until today. His wife (not the neighbor one) was cooking. And she hauled out this bright (flame) orange cookware. I swear, this is the stuff my mother had in the 1960's and I still have the large covered skillet. It's Descoware, made in Belgium. Heavy, enamel coated cast iron... bright orange! So in the movie she takes out three pots (all of which I remember!). And he snuck back to his house after dining on...
On Line Cookware?
Q: Pardon me if this is a FAQ. Would someone point me toward on line suppliers of cookware and kitchen supplies? I'm looking for quality pans and generally nice gadgets and stuff. thank you,A: Chef's Catalog is online (http://www.chefscatalog.com). You'll also find an extensive list of online cookware stores at http://www.allny.com/cookware.html -- this is primarily a list of cookware stores in the NYC area, but scroll down and you'll find a collection of links to online stores. I found two companies I really like while searching for a home/commercial range. The one I bought from (because they are initiating a price war) is Dvorson's in San Francisco...
Opinions On Cookware?
Q: Does anyone have experience, for better or for worse, with the differences between Calphalon, Le Crueset and Chantal cookware? I?m trying to choose....A: Don't. Choose, that is. Getting a full set of ANY of these is a mistake, because they all have their uses (OK, Chantal's best use is as a window display at Williams-Somoma...) For sauteeing, frying, etc, Calphalon is great. For slower cooking, stews, sauces, etc, I use Le Creuset. I'd suggest (and others have said the same thing here) getting Calphalon saute' pans and omelette pans, and Le Creuset saucepots, saucepans, dutch ovens, "buffet casserole". That's what my setup is,...
Opinions On Cuisinart Stainless Cookware?
Q: i need new cookware. now. i have a set of crappy nonstick that is wearing off, and somehow, soaking up dishwashing soap and everything tastes funny, even when i rinse the pans over and over. i found a reasonably priced set of cuisinart "everyday" stainless cookware (have a copper sandwich bottom) on amazon and was wondering if anyone here had used them and could offer their opinions. mind you, i cannot afford the *really* good stuff, i just want pans that will stand up to every day cooking, heat relatively evenly, and can go in the oven.A: "I have come to believe that the whole...
Ot: Why Buy Expensive Cookware? I Don't Get It.
Q: I have pieces of All Clad and Calphalon cookware. They are nice but cost a small fortune. I also have the QVC line of Cooks Essentials Stainless. I bought a 10 piece set for $100 US and it totally out cooks the high priced lines. It's non-stick, metal utensil safe (believe me on these two... lol) goes in the dishwasher and into the oven up to 350dF. Guaranteed for life (and I don't think that QVC's goin' anywhere) I don't understand spending outrageous prices for "name brand" cookware when stuff like this is available?????? Just for "bragging rights"? 'at's all I can think of...... And no, I don't work for...
Perma Life Cookware
Q: Have you heard "Perma Life" cookware ? I and my wife were invited to a house where a lady demoed the cookware. They were selling cookware for $2400 for 22 pieces (including lids). Can you believe $2400 for 6 - 7 pans, frying pans, etc ? Has anyone bought and used this stuff ? How much did you pay ? Is this worth it ?A: I have a Complete set of PERMANENT LIFETIME cookware that averaged 10$ per piece! Its the same great cookware that Great Granma used to get those tasty meals from! And it also served to get you your daily dose of IRON! Im talkin...
Preferred Stock Cookware
Q: For someone who cannot afford All Clad, is Preferred Stock cookware an acceptable substitute? If not, could anyone offer advice on an affordable brand of stainless cookware? Thank you.A: I'm not familiar with Preferred Stock. If you have a restaurant supply store in your area, check with them. Brands like Eagle and DuraWare are fine products. Also, All Clad makes a low-end line that is just aluminum lined with stainless--no outer layer of stainless or anodized aluminum. I'd make sure that whatever you buy has a decent thickness of a good heat conductor--just thin stainless on the bottom won't cook evenly. Do you...
Professional Cookware Recommendations (faq ?)
Q: Hello my fellow cooking fans, I am in the market to buy a new set of professional cookware pots and pans. I have looked at Anolon, Calphalon, and Circulon so far. Is there a faq for this group? This has to be one of those frequently asked questions :) Anyway, I am looking for cookware used by professionals in restaurants. I am tired of the "cheap" stuff. Any suggestions? (I see that "Calphalon" is a no-go)A: Then you need to get to the local restaurant supply place. That is where all the professional cooks buy their pans and pots. If you are looking for a matching...
Quality Knives And Cookware
Q: This has probably been brought up many times before, but I am wondering what are the general opinions of various high quality cookware and knives. For example, Caphalon, Circulon, Creuset for cookware and Henckel and Wusthof for knives? Could someone either post a list of what is considered to be high quality cookware and knives (which companies) and brief opinions on them? In addition, what properties make them nice? For example, some people say that you want a heavy pan because it distributes heat more evenly. Nonstick pans are supposed to be bad because the nonstick part wears...
Question About Stainless Steel Cookware
Q: I bought my daughter and SIL some All-Clad stainless steel cookware a couple of years ago. I learned this weekend that they don't use it very often because it sticks, badly. Does anyone have a solution for this? You can't season SS, can you?A: you cannot season it. You have to heat the pan, then add some oil, then cook. Some stuff will stick a b it and under certain circumstances, that is good. The stuck stuff in call the "fond" and when you deglaze the pan it help make a flavorful sauce. I don't use SS for eggs because a Teflon coated...
Reactive Vs. Non-reactive Cookware
Q: Recently, I was reducing an orange glaze from a recipe that called for non-reactive cookware. I'm sure the citric acid was the reason. Can someone tell me the difference between reactive and non-reactive cookware? I used a Calphalon sauce pot, because that's all I had.A: Anodized aluminum, like that found in Magnalite Pro and Calphalon, is non-reactive. Other non-reactive metals include stainless steel, tin (as in the coating of copper pots), and porcelinized cast iron (e.g., Le Creuset). Reactive metals are non-coated aluminum, cast iron, and uncoated copper. Foods with pH values varying from 7.0 will react with the metal of reactive pots, sometimes...
Recommendations For Cookware Requested
Q: I am far from a professional cook, in fact, I am really just beginning to enjoy cooking. I want to buy some cookware that will last, cooks most things well, and is relatively inexpensive. Just looking around there are SO many types of cookware. Aluminum, stainless steel of various grades, Copper coated?, anondized aluminum? It is quite overwhelming. The prices of the above are all fairly close together, and I am not sure what to get. Any suggestions on knives would be much appreciated as well. Btw, is there a cooking FAQ around? Many many thanks in advance for any helpA: My advice is to...
Recommendations For Good Cookware Starter Set Needed
Q: I want to buy a good bundled cookware set. I have a 10 piece set of Calphalon Nonstick Commercial cookware. I have not unboxed it, as I have had second thoughts about my purchase. The reason for my second thoughts? I have been watching cooking shows and reading a little more about cookware and have thought that maybe the way to go is something like an All-Clad stainless set of cookware, with maybe a single 10" fry pan with nonstick coating. Since I am a true beginner, I'm not interested in starting out with every pot that I will ever need, but...
Recommended Cookware
Q: I'm looking to turn in an old set of cookware for new and am really out of the loop. Am looking for something along the line of high end consumer to professional. I've looked at Calphalon, Analon, Circulon, Kitchen-Aid and have some LeCreuset. Any recommendations on the above or other makes? Also does anyone know what the [other] CIA uses?A: I have a few pieces of Calphalon - a 5 qt. round pot,, a 3-qt pot, and a 2 qt. pan (I love the 2-qt. pan and use it quite a lot as I'm usually cooking for two - perfect for...
Requesting Opinions On Cookware
Q: My fiance and I are getting ready to register for gifts and we are set on getting a good set of cookware. We've narrowed (if you could call it that) our selection down to 4 lines of cookware and wanted some more info from people who actually have experience with them. Our Requirements: Durable (we plan on having these for many years) Metal Handles Preferably dishwasher safe Easy to maintain (no copper) Heavy gauge metal The contestants: All-Clad Saintless Cookware All-Clad LTD Cookware Calphalon Commercial Hard-Anodized Cookware Calphalon Commercial Nonstick Cookware A few Questions: Are the Calphalon truely not dishwasher safe? Do you find yourself using mostly stainless and nonstick occasionally? *Please do not flame each other...
Revere Cookware ?'s
Q: Hello, could someone help explain to me the differences between Revere Cookware with the copper bottom and the aluminum disk. Is the new disk cookware much better in heat distribution or is there really no difference. Any knowledge or experience would be greatly appreciated. Thank you in advance.A: Well, sort of. The copper bottom distributes heat much better than stainless steel, but only if it is thick enough. A lot of manufacturers basically "paint" (in effect) a thin layer of aluminum on cheap stainless pots, and these bottoms don't do a damn thing. RevereWare has, I believe, a thick enough coating that...
Saladmaster Cookware
Q: I do own a whole set of the Saladmaster cookware. It is a very good set of cookware. I was a little surprised about the price, but it is great quality. I bought mine over 20 years ago. It still looks new. Maybe a few scratches, but after all I have raised two children and that is my main cookware except for my iron skillets. I think the fact that the company is still around and in business over 20 years, says alot. And if you think about having something as long as I have had mine, it's well worth it.A: I just attended a Saladmaster...
Saladmaster Cookware...worth The Price?
Q: I'm a somewhat new subscriber to this newsgroup so I hope this topic hasn't been previously discussed to the point of tedium. Specifically, I'm looking for some persons who have had experience with saladmaster cookware or who are knowledgeable about cookware in general to comment on the quality of saladmaster cookware and whether it is really worth the price. For the benifit of those who have not heard of saladmaster let me give you a brief summary. Saladmaster, out of Dallas, makes numerous pieces of cookware from pots and pans to electric skillets to grinders and knives. Their big selling features are the TP304 surgical quality stainless steel (which...
Seasoning Cookware?
Q: How does one "season" cookware to reduce sticking in the pans? I have a set of the Scanpan 2000 cookware that's a few years old and EVERYTHING sticks unless bathed in oil or other fluids. I know the surface is not a non-stick type but can anything be done to improve the performance?A: I'm sure someone will provide a more accurate post. Usually books on Chinese cooking will talk about seasoning a wok. As I recall, it requires scrubbing the pan to remove leftover residue with water and soap (or some detergent), then make sure that it is dry....
Seen Any Good Stainless Saute Pans Recently ?
Q: Any recommendations would be welcome! I am tired of non-stick surfaces - they always wear off. Just looking for long lasting stainless saute pan to use daily.A: Well...if it's durability we're talking about, I've got some 30 year old Farberware that's still going strong. I was merely pointing out, some people can't afford to spend $100 on one overpriced skillet...they need to save some cash for groceries, too, and that $100 is their entire budget for pots and pans. There is nothing about All-Clad that's worth $100 for a 10 inch skillet--The sheer number of "knockoffs" available proves that they can be made for much less. You are paying...
Shipping Cast Iron Cookware To Australia
Q: I am planning to purchase some cast iron cookware items from US, but suppliers do not seem to want to ship to Australia, anyone experienced this?A: Why dont you spend that bit extra and get the enamel-coated cast iron (le Crousset or similar). They are safe and retain heat wonderfully and can cook food at very high termperatures. I like the idea of starting to cook on the cooktop and then transferring to the oven. I also have a Copco (Swedish or Scandinavian) Dutch oven type oven-proof casserole type cooking dish that can be used on a cooktop and then transferred to the...
Softness Of Stainless Steel (cookware)?
Q: I have a question about how hard stainless steel is supposed to be. By its name (steel), I thought it would be next to indestructible. But much to my surprise, it seems to be scratched very very easily!! Is this the nature of this metal? I am talking about good quality 18/10 stainless steel cookware and utensils. 1. It gets scratched by plastic. I usually use the soft side of my 3m scotch brite pad for washing dishes and pots. I happened to use the rough side one day, and viola, there were thousands of fine scratches on the polished surface!! Very noticeable. Unless I am mistaken, the...
Stainlees Steel Cookware Pro's And Cons?
Q: I am looking to buy new cookware, specifically stainless steel. I am very interested in the Sitram Cybernox line. Sitram claims this line to be a non-stick metal alloy, not a coating that will peel or chip and, that the pans oven/broiler safe to 1800F. If anyone uses this line I am intersted in any feedback positive and negative. If you are using, or have used, another line of stainless cookware I would love any feedback re your experiences as well.A: I think that stainless is relatively non-stick if you heat it and then put in the oil. I have a set...
Stainless Steel Cookware
Q: Does any one have experience (good or bad) w/ stainless steel waterless cookware? Five Star in particular.. ThanksA: What's "waterless cookware"? What is "Five Star"??? Please help us understand your query....
Stainless Steel Cookware (health Craft)
Q: Hello everyone, this is the first time I've visited this newsgroup. I hope someone can give me advise on quality cookware. My wife and I have not been happy with our Le Creuset cast iron cookware on our surface burner stove. The enamel covered pots have chipped and the teflon coated pans do not heat evenly throughout the bottom and up the sides. Yesterday afternoon we watched a demonstration of Health Craft cookware at a home and garden show. The salesman showed how this company's "5 ply nicromium surgical steel" cookware can be used for waterless / oil-free cooking. While this guy was both...
Stainless Steel Cookware Help.
Q: You do need to season the frying pan - I used the same method as for cast iron and it worked OK. It still won't be as non-stick as real non-stick, but it is a good bit better than unseasoned. The crud you get when frying bacon comes off OK with a nylon brush after a good soak now I've seasoned the pan, where it used to take a pan scourer. Hope that helps.A: The instructions that came with my stockpot include: "Cleaning: Wash with hot soapy water. For burned on food, use a nylon or plastic scouring pad. Do not use...
Stainless Steel Cookware Set Shown On Qvc Or Hsn ?
Q: About 3 months ago, I came across on TV, either QVC or other home shopping network, that they are selling a set of stainless steel cookware, a lot of pieces, at least 20-piece. I forget where I saw it and what is the name or order number for the cookware set. Anyone has any idea? Things I remember about the show/set as follows: 1) at least 20 pieces, one of the selling points is, only $7 or $8 per piece, said one woman. 2) "designed" by a resturant chef/owner, he shows up on the show, of course. 3) towards the end of the segment, they...
Stainless Steel Cookware Vs. Nonstick
Q: Hoping someone can help me here with some advice. I'm thinking of getting a new cookware set (Cuisinart, Calphalon, or All Clad) and am trying to decide between regular stainless steel and nonstick stainless. Exactly how "nonstick" is regular stainless? I realize it's better for browning and such, but I do want something that's relatively easy to clean as well. Also, anyone have any advice as to which manufacturer makes the best cookware and which cookware set give the best bang for the buck? Thanks!A: Non stick is good for eggs, pancakes and the like. Proper cooking of most everything else is best with plain SS....
Stone Cookware
Q: Hey all.....my younger sister (aka a Martha Stewart clone ;) has given me some stone cookware for my birthday. I got a muffin pan, a pizza pan, a 13x9 rectangular pan, and a loaf pan. Does anyone have any comments on this type of cookware? And have you used any of this type of cookware? Thanks in advanced for any comments......A: Don't drop it; it breaks easily, as I found out the hard way. The pizza stones are supposed to be great. I had a pizza stone, but got rid of it because it absorbed grease and smoked when I turned on the...
Swiss Diamond Cookware
Q: Does anyone have an comments, good or bad, and/or recommendations regarding Swiss Diamond Cookware. I'm considering buying a set.A: It looks like it is all non-stick. I wouldn't want every piece of my cookware to be non-stick. I would just by a decent set of stainless and use the rest of the money for something else....
T-fel Cookware?
Q: I thought it was "T-Fal"? Anyway, this stuff is advertised on Home Shopping Channel, sold at K-Mart, you can find them at the dump... If you want to spend just a few dollars on a whole set of cookware, and you don't much care about quality, or lasting value, then this is the kind to get. You can't put them in the oven, you can't use metal utensils, they don't recommend that you put them in the dishwasher, etc. (I saw their instructions sheet once). Again, as an interim measure, you can cook in these, but if you're ready to start building a set of...
Test Kitchen; Homemade Or Semi? A Bake-off
Q: By Amanda Hesser In the world of Sandra Lee, cookbook author and self-proclaimed ''lifestylist,'' life is hectic and people are busy. Cooking food from scratch takes too much time, and is too difficult and too expensive. And while Ms. Lee believes that cooking food for someone is the greatest gift, it really isn't worth too much of your time. Ms. Lee also believes she has the solution for these problems: food that is ''Semi-Homemade'' (she has registered this name). In her first book, ''Semi-Homemade Cooking'' (Miramax, 2002), which according to Nielsen BookScan sold more than 61,500 copies and landed her on the New York Times best-seller list, Ms. Lee...
There's Probably A Faq About This: What's The Best Cookware Set?
Q: Having a new house built and we're going to upgrade all our old stuff. I want to get rid of the Circulon that has most of the anodizing worn off (and some of the bottoms are no longer flat) to something better. What cookware set would you recommend?A: You're right about the FAQ: http://www.wam.umd.edu/~sek/wedding/cookware.txt I have no personal knowledge about cookware. I have RevereWare copper bottom pots and pans, and am happy with them. Avoid Calphalon. We treated ours with tender loving care, and the gray anodized surface also came off. By contrast, we love our All-Clad http://www.allclad.com...
Tinning Cookware With Silver
Q: Silver metal is cheap. Would it make sense to "tin" cookware with silver instead of tin? I know some chocolate molds are "tinned" with silver -- I presume either to improve release from the mold or avoid giving the chocolate an off flavor. The device I wish to "tin" is antique cast iron, and is actually a meat or juice press, so no cooking will be done with it.A: Why not use the original cast iron piece as a pattern, and cast a new one out of solid silver? Take it a step farther -- make a cast silver frying pan, patterned after your favorite old Griswold...
Toxicity Of Non-stick Cookware
Q: My brother-in-law and his wife have a few birds and they say they can't cook with non-stick cookware because the fumes given off by the non-stick coating when subjected to heat is toxic to and will kill the birds. My questions are: 1) is this true 2) if it is, what effect do these 'fumes' have on my wife and I (adults) and my 2 young kids (one of which is a new-born)A: That pet birds have been killed from exposure to fumes from nonstick cookware, yes. It seems that overheating the pan (450F+)...
Professional Cookware
Q: I have been researching cookware in the eventuality that my current cookware wears out its welcome, or its non-stick coating, whichever comes first. From the research that I have done it appears that the cookware "of choice" for the professional chef is some kind of hard-anodized aluminum, namely, Calphalon . The cookware of choice for the home-cooking enthusiast seems to be calphalon or circulon, which, as I understand it, is calphalon with a "hi-lo" groove and a non-stick coating. I have also read lots about the cookware of the great french chefs being stainless steel, with an...
Types Of Stainless Cookware
Q: I've wanted All-Clad for years, but they are just too expensive for me to go out in buy. I've started to look at less expensive stainless such as Cuisenart and Calphalon and noticed that although they are very well made, they aren't as heavy as the All-Clad. My question is, can anyone recommend why I should hold out for the All-Clad or should I go for the lighter, less expensive other brands. If people out there have good experience with the less expensive I'd love to hear it. Thanks to all who answer in advance. I'd love to replace my old Revere pots that have seen better...
Uestion: Is Cuisinart Or Farberware Cookware Any Good?
Q: I have been looking at a lot of diffrent cookware. Two of the nicer sets (that are available to me in local stores) are Cuisinart Everyday, and Farberware Millennium nonstick. The Cuisinart cookware is MUCH more expensive than the Farberware (almost $300 for a 14 piece set). But what I'm really interested in is which is the better cookware. Ie how do the two compare as far as hot spots, sticking (not real important), performance, wear and tear over the long term, etc. Dose anyone have any experience with these brands and if so good or bad? I have been thinking...
Ultimate Cookware?
Q: I used to wonder what kind of pots Pierre Franey used on his TV show. They looked to me to be anodized aluminum (like the Calphalon stuff I lusted for), with nice looong handles... and they appeared to be lined with stainless steel! It seemed that this was an excellent idea, since I'd heard some bad things about cooking on anodized aluminum (sometimes messy to clean up), but I'd never heard of such a thing. On a recent trip to Williams-Sonoma I discovered that these are All Clad pots and, not only are they well-made, they are very expensive. So, I'll call the...
Ultrex Cookware- How Does It Really Work
Q: I am very interested in the Ultrex cookware that is advertised on the HSN. But being the researcher I am, I could not find the company, the warranty, ratings, reviews, or anything about the product on the Internet. Until I find out some of the above Info I will not purchase the products. Does anyone know the web address of the company, any relavant reviews of the product, and warranty info beyond just the 55 year blurb on HSN. They make alot of lofty claims, such as being the best cookware in America, metal utensils can be used without harming the non-stick surface, etc... Thank you for any...
Ultrex Cookware Help If You Own It
Q: I was about to order the ultrex cookware and was wondering if anyone had any experiences with it that were good or bad, in general im interested in knowing does the coating come off after time of use especially when and if you use a metal utensil (thats one of their sales pitches is that metal spoons etc wont take the coating off) also if you have this cookware please let me know where you got it from ive done some Internet searches and haven't been able to find it available on the net if you know of a web site that is working that...
Urgent Help On Calphalon And Other Cookware
Q: My future mother-in-law is giving me $500 towards the cookware of my choice! (She knows I love pots!). I was all set to get a mess of Calphalon (the regular stuff - not non-stick), and was just told by a long-time user that she doesn't like it - doesn't clean well, damages easily, and doesn't cook all that well. I would like to hear from anyone with experience with Calphalon what you think, and any suggestions people might have for other kinds of cookware as substitutes - particularly for sauteing. I already have some Le Creuset which I love, but I want something which heats/cools quickly, unlike cast...
Visions Cookware Help
Q: How in God's name do you get EVERYTHING that you cook in Visions Cookware to st op sticking to the bottom of the damn stuff. thanksA: Are you using gas or electric stove? My boyfriend's mom uses a heat diffuser on top of her electric burners, which seems to help -- it's a wire piece which lies between the burner and the pot (hers are shaped like stars). On my gas stove, I'm not sure what I'd do, though... How in God's name do you get EVERYTHING that you cook in Visions Cookware to stop sticking to the bottom of the damn...
Wanted: Recommendations For Good Cookware
Q: I'm getting tired of Dupont Silverstone or whatever it is non-stick aluminum cookware. I want to buy a good cookware set that will last through my lifetime. I'm willing to spend $300-$500 for a basic set (2 saucepans, 3 saucepots or so). Several namebrands I have heard are: 1) Circulon 2) Calphalon 3) Townecraft Chef's Ware 4) Saladmaster 5) Magnalite Pro 6) Farberware 7) Revereware The qualities I would like are 1) Non-stick surfaces 2) Ruggedness I've found stainless steel (Farberware) hard to keep clean without scouring the surface. Am I doing something wrong? Some of these new-fangled materials sound promising. I've seen the Magnalite Pro pots and pans. They...
Wanted: Recommendations On Calphalon And All Clad Cookware
Q: I'm interested in purchasing high quality cookware and have narrowed my selection down to Calphalon and All Clad. As such I've yet to decide on stainless steel, stick resistant, or non-stick, regardless of the supplier. With respect to suppliers, I'm leaning toward the All Clad realtive to overall quality, performance, and reliability but have a strong dislike for the All Clad handles - they are poorly designed relative to ergonomics (I'm 6'3", 200lbs and the All Clad handles hurt my hands when picking up the larger saute pans, etc.). A friend of mine owns the Calphalon stainless and swears by it (he likes classics...
Waterless Cookware?
Q: I guess for some things that is ok, but what bothers me the most, is the sales tatics, my husband is spanish speaking and they are targetting a group of people (we have belonged to this group for years and have been very intimate with it so this isn't meant as a put down, if I offend sorry) who have very limited resources are easily forced to buy them at a very large price - these people need to buy homes, food, etc..not be sold by a professional salesman when they can go to SAM's Club or the PRICE club and buy 15 sets of pots...
Waterless/greaseless Cookware
Q: I went to a Home and Garden show here in the Orlando FL area this past weekend and there was a cookware demonstration of waterless/greaseless cookware by Heathcraft. It was really nice cookware and I was tempted to buy a set which is really rather expensive - $2600 + for the entire set. I cancelled my order figuring that I had better research this in more detail before plunking down that kind of money. I am a regular type cook - no major cooking done by me. I like to try new things and this cookware seemed really good for lowfat...
New Cookware
Q: www.cookinghell.com needs all your funny culinary stories, jokes, recipes, hints, tips, views and news. A: It is time for us to get new cookware, so I need some recommendations. We had only cheap pots and pans before, many of them hand-me-downs, but now I'm in the market for something of better quality. I have some very specific preferences, however, and after looking up some brands at the Amazon.com site (as I happen to have a gift certificate) I start doubting that what I am looking for exists at all. I have a pretty good idea what pieces I need....
What Are The Best Cookware Sets (brands)
Q: I am starting to learn to cook and want to invest some money into some pots and pans that would last a while (also,, if you have any suggestings as to what a kitchen should contain in terms of pots and pans ) also, what else should a kitchen have in general? :) (what spices are good to carry all the time...etc.. small utensils..etc.)A: I would say 99% of my stovetop cookery is done in these four pans. The stockpot and saucepans are inexpensive stainless, and cost very little. I do have a bunch of inherited Calphalon that looks very nice as it sits on the shelves so...
What Is Good About Hard Anodized Cookware?
Q: I have seen many sets of Hard Anodized cookware and it is usually so expensive. I have heard that most professional cooks use these type. I wanted to know why it is better than stainless steel or aluminum pans and why it is worth all the extra money. I saw a 8 piece set of Hard Anodized Warever with metal utensil safe non stick coating for only $80 and I was considering buying it. Thanks for any advice or info.A: Hard Anodized cookware is popular because it has a certain snob appeal, because it is durable, because it cooks well as a...
What Kind Of Cookware Should I Purchase?
Q: In the not-too-distant-future, I plan to purchase a new set of cookware. I do not plan on spending another penny on CRAP that won't last a year. However, I am not wealthy. What I want is some GOOD to GREAT cookware, and I'm willing to pay for it - as long as it's not thousands of dollars. - but I want some stuff that will last me a long, long time. I'm interested in opinions... If anyone can tell me what they use, and how they like it, and how well it's stood up...
What Makes Calphalon Cookware Non-stick?
Q: What are you cooking at a temperature of 536F? Calphalon and all the other knockoffs use an anodized surface. Anodizing is an electrolytic process that electrically bonds another, harder metal to the surface of the aluminum. This prevents the aluminum from coming into direct contact with the food. This gives you the superior heat conducting capability of aluminum combined with a hard, non-reactive surface like stainless steel cookware offers. Since the aluminum is not in direct contact with the food, you can cook acid foods, like tomato sauce, that you can't cook in standard aluminum cookware. Since the anodized surface is sort of welded to the aluminum, it...
What Sizes Of Cookware?
Q: Having recently fallen into some money (ah, wedding gifts! :^), it's now time to purchase some quality cookware. I've followed the thread on what types of cookware with great interest, but what 3, 4, or 5 sizes and kinds of cookware are esential? Fry pans? Saute? Stock pot?A: Undoubtably you will get as many answers as posters. A great deal will depend on how and what you cook. I will not presume to tell you what's "essential," but will mention my own usage. The pans I use *most* often (with brand names, where applicable) include: ...
What's Your Favorite Cookware, Cooking Utensils/appliances?
Q: Hi everyone, I have been enjoying this message board as a lurker, but am coming out of hiding to ask for your help. I am getting married this year, and since we have been living in an extremely small 1 bedroom apt. w/a galley kitchen (no room for 'real' cooking, much less cooking appliances) I have no idea what kind of cookware, cooking utensils, or cooking/baking appliances to register for. Hopefully we'll be moving into a house with a 'normal' kitchen after the wedding, and then I would really like to get back into cooking, which is one of my passions since I was a little...
Where To Get Cast Iron Cookware
Q: Does anyone know where to get decent quality (not neccesaarily top of the line) cast iron skillets etc ?? I bought two for my daughter at a local hardware store, under $25.00 for both. The older the hardware store, the better chance of finding them. Any help will be appreaciated.A: While I haven't specifically purchased cast iron cookware from them, I have bought ALOT of things from Cabelas and have always been very satisified with both the service and quality of their stuff. The Army Store in my town sells a whole line of Lodge cast iron (nice, but inexpensive) cast iron cookware. ...
Where To Purchase Cookware
Q: I,ve been looking to purchase some good quality cookware and have finally decide on All-Clad Stainless. Now the question...Where can I get the best price???? Anyone know of any good discount mailorder suppliers who might carry high end cookware? I found Chef's Collection, but am looking for sme others.A: Do you have any factory outlet malls in your area? I have been to a couple in my area. They have cooking equipment stores, corningware, clothes, flatware, etc. I found each mall has different company stores. I've found some great bargains at these malls....
Who Has The Cheapest Price On All-clad Cookware?
Q: Hi Everyone, I am in the market for a set of All Clad cook ware (All-Clad LTD). Who has the best prices on these, on or off line? I don't visit this forum often, so would you please email me with your responses direct. Thanks for any and all your help.A: you are not only obnoxious, but also extremely rude. My signature advertising my business is always printed at the bottom of all my messages (personal or business) and has nothing to do with the question I was asking or where it was posted too. If I wanted to spam a news group with movie poster advertising I...
Why Buy Expensive Cookware? I Don't Get It
Q: I have pieces of All Clad and Calphalon cookware.
Why The Rub? Was Re: Cookware Recommendations Wanted
Q: Well, along those lines, everything I and my parents have ever owned which was 'non-stick' lost it's non-stick coating very quickly in spite of being treated with excessive care. Has anybody got any ideas on either prolonging the non-stick coating or a type of non-stick cookware which doesn't lose it's non-stick-ness?A: I just bought a set of Scanpan 2000 pans. There is a life time guarentee on the non-stick coating (apparently the coating is a layer of titanium bonded to the cookware). The claim is that metal untensils are ok, etc. I've had the stuff for about a month and so far I'm pretty...
Wok Seasoning - What About The Outside Of It?
Q: I don't use my wok much.... Consequently, the outside shows some rust.....Is that ok? Should you also coat the outside w/ oil? And, How long would you think it took to season a wok till it turned black? Any guesses? Oh yeah, if you have a good Wok recipe please mail it to me. I just bought some fermented black beans, black bean sauce, rice wine, ginger, garlic, seasame oil, hoisin sauce, oyster sauce, black mushrooms, five-spice powder...just need some black vinegar, and a few other spices and such.A: I don't think it's OK to have rust on any cookware. Sooner or later the rust will make...
Wtb: Lodge Cast Iron Cookware
Q: I can't believe you can't find a local dealer. If Target, WalMart, and your local hardware and kitchen stores don't carry Lodge cookware, try Lodge themselves: http://www.lodgemfg.com/ If you're touisting outside the far west, Cracker Barrel restaurants sell house-branded Lodge cookware.A: Looking for new or used Lodge cast iron cookware. Tell me what you got. Just need a bunch for camping this summer (and next) Bought a huge propane stove, just need the cookware to go with it. Bring all offers I'm not trying to find a local dealer...Hell I can go right to GI Joes and buy new stuff at MSRP! I'm looking for someone that...
Your Favorite Cookware?
Q: Im in the process of buying some good cookware and would like some input as to which kind you think is the best or your favorite. I would appreciate if you could email me. Thanks,A: All-Clad by all means. We bought a starter set more than ten years ago and with near daily use it's still like new. We've added many new peices over the years. I've also used it commercially with equal success. If you want durable even heating cookware then this is the stuff. Yes, it's expensive, but you're only going to buy...
